
I’m calling it! It’s summer here at StoneGable! The weather has finally warmed up enough to plant my garden and clean the patio. I tend to eat very seasonally, and today is no exception! Here’s an early summer menu plan just for you!

MONDAY
I do the prep and Bobby does the grilling! Kabobs are a great easy meal. The secret is to find food that will grill to a perfect doneness all at the same time. Thanks, Jenna from Recipe Diaries!
I’m grilling the asparagus on the grill too! Easy dinner!
TUESDAY
If you make one thing on the menu this week it should be the rice. It’s my grandmother, Nani’s recipe. It is so easy and magnificently delicious! I eat it every week and you just might too!
I planted fresh thyme in my herb garden yesterday so I’ll be using it to make these sweetly intensified carrots!

WEDNESDAY
I LOVE LOVE LOVE QUESADILLAS! And this recipe is amazing! So many good-for-you ingredients! And you can count up the point. Thanks, Slender Kitchen!

THURSDAY- SLOW COOKER DAY

Remember when I told you to make the rice if you made one thing this week? Well, make the grilled vegetables too! Make them according to the recipe and you will be making these all summer long, really!!!!!
Great cold, in a pasta, and on a sandwich. These are my way to eat veggies!
FRIDAY
I’m quite addicted to my Instant Pot! It’s amazing what one can whip up in it! I make breakfast, lunch and dinners in my Instant Pot! If you love the convenience of making a meal in one pot and not having to babysit it while it cooks, then maybe you should try one too!

SATURDAY
These salmon cakes are the definition of culinary beauty! And they look divine! I’ll be following this recipe from Julia at Vikinlinka but putting them in my oven air fryer at 375 for about 7 minutes.
Just check them because all air fryers are not the same!
SUNDAY – FAMILY DINNER

I’m running out today to get the easy peasy ingredients for this dairy free ice cream. Three WW points! Half of this recipe is one serving. I’m saving 3 points so at the end of the day I can have dessert! YUM!!!!
