ON THE MENU AUG 6TH
This week I’m using the bounty of my garden to make dinner. Don’t worry, there is a lot of meat involved too. We like veggies but I am such a carnivore! GLAZED STREUSEL TOPPED ZUCCHINI BREAD
OH, YUM! Today’s StoneGable treat is a real winner. Take an already classic, time-honored zucchini bread recipe and add a crunchy streusel topping and then guild the lily and add a white sugary glaze! This recipe is a spectacular culinary winner! And a must have in your recipe box! You will love it! Today let’s make Glazed Streusel Topped Zucchini Bread! Okay, let’s make this scrumptious zucchini bread!


- 3 eggs
- 1 cup vegetable oil
- 3/4 cup sugar
- 2 tsp vanilla
- 3 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 2 cups shredded zucchini
- 1 cup nuts- I use walnuts
- 1/4 cup butter
- 1/2 cup rolled oats
- 1/2 cup light brown sugar
- 1/4 flour
- 1/2 tsp cinnamon
- 1 cup confectioner's sugar
- 1-2 TBS milk
- Preheat oven to 325°.
- Grease 2 standard loaf pans (8 x 4 inches)
- In a large bowl beat the eggs, oil, sugar and vanilla. In a second bowl add the flour, salt, baking soda, baking powder and cinnamon. Mix. Add the dry ingredients to the wet ingredients until well incorporated. Fold in the zucchini and walnuts.
- Pour batter into the loaf pans.
- Combine the streusel toppings in a bowl and mix and crumble with your clean hands. Sprinkle the streusel over the batter evenly on both pans. Press lightly.
- Bake for 60 minutes. Cool on a wire rack. After 15 minutes remove from the pans and finish cooling.
- To make the glaze, combine the confectioner's sugar with 1 TBS milk. Add more milk if needed to make a glaze that drizzles.
- When the bread is totally cooled drizzle the glaze over it.
- Store in an airtight container.
- Or freeze. Wrap in plastic wrap and then in foil.

I thought we were going to have an early spring, here at StoneGable. The weather has been so warm, the daffodils are blooming and so is the forsythia! But we had a couple inches of snow today and there is more snow and freezing rain in the forecast this upcoming week! And the temperature has dropped by more than 20 degrees. BEAUTIFUL AND THIN EVERYDAY PANCAKES
I love fluffy homemade pancakes. But I’m not a fan of them when they get so thick it truly is like eating cake. I like my pancakes thin and still fluffy! Stacked with butter in between and covered with real maple syrup or rolled up with berries or sausage links inside! YUM!!!! These everyday pancakes are in between regular buttermilk pancakes and crepes. And leftovers are amazing when toasted and spread with butter and jam and eaten like a piece of toast! Today I’m heading to Costco, my favorite place to grocery shop in bulk! I’m heading right for the meat department and picking up some scrumptious salmon and chuck roast! I also buy two rotisserie chickens every time I’m there. I just can’t help myself. I’ll cut it all apart and save the bones for stock. YUM! This week some of the chicken will go into the freezer and I’ll use the rest for lunches. Chicken on a Caeser salad or made into Chicken salad is the perfect lunch in my book! I always “jump the gun” when it comes to transitioning from one season to another. Especially when it comes to Spring! I love love love gardening… or at least the idea of gardening. Hummus is a spread well known and eaten in the Middle East. But over the years it has become wildly popular in other countries too! Hummus is the Arabic word for chickpeas and these legumes are the star of this tasty spread! If you haven’t tried it you should. It’s a delicious appetizer or an accompaniment to a meal. It’s usually served on pita or flatbread but we like to dip veggies in it! YUM!
