Spring in Lancaster Co. is just so beautiful! The trees are pushing out spring green leaves, and all the cherry, redbud, and dogwood trees are blooming. Farm fields are verdant, and farmstands are buzzing with activity. It’s like the world in my neck of the woods woke up, and I remember how much I love this agrarian place where we live.

I hope spring, where you live, is just as magical!

9. CULINARY CORNER: It’s asparagus time. Here’s an easy and delicious recipe I’ve been making. Preheat your oven to 425°. Put 1 lb of washed and trimmed asparagus on a rimmed baking sheet. In a bowl, combine 3TBS olive oil and 1- 1/2 TBS minced garlic and pour over asparagus. Toss to combine and salt and pepper liberally. Bake for 10-15 minutes until the asparagus is not quite done. Meanwhile, mix 1 cup grated Mozzarella cheese and 1/4 cup Parmesan cheese together in a bowl. Take the asparagus out of the oven and sprinkle it with cheese, leaving the tops and the end without the cheese. Broil the asparagus until the cheese is melted and golden. Serve immediately.
