Fall menu plan and lots of delicious recipes for the week of October 22nd.
BOWL OF SOUP

Hey sweet friends! If you know where fall went can you please tell it to come to Lancaster Co? It is overdue! I think it might have gotten lost on its way! It is so so late! Most of our trees are still green we are still getting tomatoes from the vine! Fall is my favorite season! At least I can eat like it’s fall while I wait for it to get here! Here’s what’s on the menu…

This week there are 32 recipes for you! It’s going to be a yummy week!

MONDAY- SOUP DAY

I love the idea of butternut squash soup but really just the “idea” of it until I made this recipe. And tweaked my tweak a bit. Instead of bacon I now use 1/2 the tube of Bob Evan’s sage sausage! I cook the sausage in the dutch oven before I add the apples and chicken broth.

If you only like the idea of butternut squash soup give my tweaked tweak a try! You will probably love it!

And if you want to get a little crazy… add the bacon as a garnish! WHAT? Oh, yes, friend!

BOWL OF SOUP

TUESDAY

This is such a glorious company worthy dish to eat on a weeknight! And to make this a little more WW friendly I’ll use half and half instead of heavy cream. I’ll be using just use 2TBS of sauce over my portion of salmon even though I could literally drink the sauce!

I can’t wait to make this main dish recipe from Christina at Eat Well 101!

Pears are in season now and they are not only healthy and scrumptious but they work in many savory dishes too! Roasting pears, like in the recipe brings out their sweetness! YUM!

WEDNESDAY

Queso Chicken is one of my go-to chicken recipes. It keeps chicken moist and has my favorite Tex-Mex flavors! YUM!

Won’t this chicken be wonderful over some Mexican street corn? I’ll use frozen corn since corn is not in season.

I’m also making homemade flour tortillas, so much better than store bought. We can scoop all the goodness up in a tortilla and eat it!

THURSDAY

Nani’s Sauteed Chicken is good any time of year but on a chilly day, it is really at its best! I always feel like I am giving you a gift when I share this recipe.

My childhood memories are rich with eating this delicious, peasant food! YUM! It’s easy to make but don’t let that fool you! This dish is full of deep, aromatic flavors!

FRIDAY- SOUP DAY

I am really hungry for Tex-Mex. Here’s another recipe with this tasty flavor profile!

Wouldn’t you love to make dinner in 20 minutes? Well, this Cheesy Chicken Enchilada Soup only takes 20 minutes to prepare! And what a great dish for an evening in with Bobby watching a movie or playing Scrabble!

Thank you Ashley from Wishes And Dishes!

And make sure to check out my friend Ann’s cornbread casserole recipe. It uses a box of Jiffy cornbread and is delicious!

SATURDAY

Our family loves homemade pizza! It is so so much better than the kind you get delivered to your door of frozen from a box. It is crisp and chewy and yeasty and fresh! And there are so many ways to top it!

Homemade pizza dough does take a little prep work. But if you plan ahead the flavor is a huge reward. Homemade pizza dough can be made the night before or you can freeze it for a quick meal.

If you have never made homemade pizza your really should!

We are making it with a mushroom marinara sauce and fresh mozzarella. And topping it with Arugula salad! Just talking about it makes me so so hungry!

SUNDAY- FAMILY DINNER

I’m making my favorite holiday recipe today! We are having a family for dinner and this recipe has been a beloved Christmas recipe for decades! No, we are not celebrating Christmas yet!

What is so fabulous about this brisket among other things is that it is a make-ahead dinner! And everyone just loves it!

Why not give it a try now to see how easy it is then I bet you just might be having Holiday Beef Brisket for Christmas dinner this year!

TREAT OF THE WEEK

If you make one thing on the menu this week the Pumpkin Coffee Cake should be it. It is so moist and spice forward! And crazy good. My family loved it!
