MONDAY- GRILLING

I count an amazing hamburger among one of my favorite foods! Just thinking about one makes my mouth water!

Today’s hamburger recipe comes from Stephanie at Plain Chicken. Bobby is grilling and I’m making the french fries in the Air Fryer and the cucumber salad.

We are also having Strawberry Shortcake for dessert tonight. Fresh strawberries are now becoming local! This recipe is a StoneGable favorite. The shortbread is made in an 8 x 8 pan instead of dropping the batter like a biscuit. And it is low fat, although it does not taste that way at all!

We will splurge tonight and have it with ice cream. But, the real way to eat it is for breakfast swimming in milk.

I have to say, if you make one thing this week the StoneGable Strawberry Shortcake must be it!

TUESDAY

Okay, what’s not to love about chicken and queso?

Oh, this recipe looks and sounds so so good! It does have lots of scrumptious cheese but if you just scoop a couple tablespoons (if you can) to serve yourself the calorie count can’t be that bad! For me, this recipe is so worth walking an extra 30 minutes twice on Tuesday!

If there are leftovers, I’ll shred the chicken and serve it over Nachos, shredded lettuce, tomatoes, sliced black olives, and sour cream. This recipe is insane!!! Thanks, Barbara at Butter And Baggage.

WEDNESDAY

Salmon pairs so well with oranges. I’ve made this recipe several time and just love it!

Today’s wonderful recipe is from Lubya at Will Cook For Smiles. This is a pantry recipe, which means I usually have all the ingredients on hand to make it.

THURSDAY

I think tonight’s dinner is so beautiful! Puff pastry makes every food more glamorous!

Asparagus is still in season here but not for long so I’m so excited to make this last-hurrah- of-a-main-dish as a way to bid our local grown asparagus au revior until next year! I’ll still be able to find asparagus but it won’t be local and not nearly as fresh.

FRIDAY- SOUP DAY

I make and we eat soup all year long. If there are not a few containers of frozen homemade soup in my freezer I get get nervous!

This week’s soup is hearty and has so many of the ingredients we love except for kale.

YIKES! There I admitted it! I am a kale hater! I know this is so so politically incorrect! But I believe there is a large, silent, underground, every-growing swell of humanity that just does not like the curly vegetable that until most recently was the garnish on salad bars!

I say kale haters arise!!! There are much better alternatives! Did you know that romaine lettuce is actually healthier than kale? Not that I’d use romaine in tonight’s soup. But I’ll probably use swiss chard or spinach or another leafy green.

For this recipe, I’m substituting equal parts of evaporated milk and greek yogurt for the heavy cream.

I can’t wait to make this really tasty soup!

SATURDAY

I think appetizers are so work intense!

It’s pretty standard to have 4-6 appetizers per person. Say you make three different kinds of appetizers and you are having 8 people over! I think that is a lot of work!

I found these gorgeous appetizers at Skinny Kitchen and thought they would make a really amazing summery main dish! Thanks, Nancy! I can’t wait to make them for dinner. AND I’ll be sure to make them the next time I need a fun and yummy appetizer!

We are also having bruschetta with the stuffed antipasti shells. Oh I could eat a gallon of bruschetta! This is one food I really need to watch myself! Bread, tomatoes, olive oil, basil, andgarlic. What’s not to love, right?

SUNDAY

I’ve been making fish tacos for years. They are my mom’s favorite!

The fish are best when it is batter-dipped. But frying fish does add a lot of extra calories to this recipe. Worth it but I found a suitable alternative.

Now I am making my fish in an Air Fryer! It has lots of crunch but not so many calories. Here is my very favorite Air Fryer Cod from BerryMaple.

Honestly, you cannot beat batter-dipped fish but Air Fryer fish is really delicious too! Just follow the recipe either way!

SWEET TREAT OF THE WEEK

This week’s sweet treat is not a pie, technically! It’s a tart! And what a tart of a pie it is! Before strawberries go out of season make this beautiful dessert!
