ON THE MENU #227

On the menu has 33 scrumptious recipes! 33 recipes mean a great week’s worth of dinner menus! Make each night’s menu just as it is or mix and match them. The choice is yours. Make sure you check out the additional recipes I’ve written in the introductions to some of the nightly menus. They are easy and so good!

This week will be a busy week of having family and friends for dinner. When my home is filled with faces I love I’m the most happy! So let’s cook great dinners and share our food and love!

Here’s what’s on the menu this week…

MONDAY- 20 MINUTE MEAL

Isn’t this a beautiful looking dinner? And it can be made in about 20 minutes. This is my kind of meal on a Monday when I have a very bush day!

We love all the delicious Mediterranean flavors in this pasta. YUM!

To round out this meal we like to serve crusty bread with an herbed olive oil.

Dipping oil easy to make. Use 1/3 cup olive oil and add a good pinch of dried oregano, rosemary, red pepper flakes, salt, and pepper. And add 1-2 cloves finely crushed fresh garlic cloves. Mix and serve in a small dish. This is just like the kind Italian restaurants serve! So good!

I love this oil poured over pasta and served with grilled fish or chicken on the side. So versatile.

TUESDAY- AIR FRYER

I love love love salmon cakes. I ate them as a child. But these scrumptious Air Fryer salmon cakes are not your mother’s salmon cakes. They are so flavorful! Crisp on the outside and tender in!

If you have not had salmon cakes or not had them since you were a child you really need to give these a try!

And make the homemade tartar sauce in the recipe. Super easy and so so much better than store bought!

WEDNESDAY- GOLF BUDDY DINNER

After Bobby plays golf today we are having a few of this golf buddies over for a cold beer and a good dinner!

The guys will love these chicken drumsticks from Natasha at Natasha’s Kitchen. The marinade for these drumsticks would work on so many things, fish, veggies and even as a salad dressing!

I’m a huge fan of homemade marinades. They can be tweaked and used for so many other dishes.

Here’s my go-to marinade for all meats (great on steak) and to drizzle on grilled veggies...

Mix together 1/2 cup olive oil, the juice of one lemon, 1 TBS Worcestershire sauce, 2 finely minced cloves of fresh garlic, 1 tsp dijon mustard, 2-3 TBS balsamic vinegar, 2 TBS finely chopped basil, salt, and pepper.

This recipe is a keeper!

THURSDAY- SLOW COOKER DAY

We are chili fans! When I just need a bit of comfort food I make chili! You can make my chili recipe in the slow cooker and on the stovetop. So for tonight’s dinner, I’ll do the prep early in the day and put it in the slow cooker on low to marry all those delicious flavors together!

We serve chili in big shallow bowls with sour cream, chopped red onions, grated cheddar, and a layer of air fryer tortilla strips on the top.

Air fryer nacho chips are so easy to make. Here’s how I make them…

Preheat the Air Fryer to 360 degrees. Stack 4 tortillas and cut them into strips with a pair of scissors. Spray or toss them lightly in oil and air fry them in single layer batches for 4 minutes turning halfway through. The strips should be lightly golden. Sprinkle the with a bit of salt.

CHILI IN A WHITE BOWL

FRIDAY- PIZZA AND A MOVIE NIGHT

Since our son and family moved back to our area we are often enjoying Friday Pizza Night with them. And we watch a kid movie with our granddaughter Emma Kate who just turned four. Our favorite movie is Sing. Even if you don’t have a kiddo to watch it with it is so worth seeing.

We love to cook the pizza dough on the grill and then add the toppings and either let them cook also on the grill or bring them in and finish the pizzas under the broiler.

My daughter-in-law has gluten issues so I’m trying my hand at the gluten-free pizza dough. This cannot be made ahead but the recipe is pretty straightforward.

I’ll make the regular pizza dough on Thursday and let it slowly develop a lovely complex flavor in the frig overnight.

EK likes cheese pizza and I’m making a cheese, mushroom and prosciutto pizza for the grown ups. They taste so delicious topped with my arugula salad.

PIZZA ON A PEEL

SATURDAY- COMPANY’S COMING

I love to have company for dinner. But I don’t like to fuss and spend time in the kitchen while my company is here. Tonight’s main dish is such a tasty and pretty dish from Jenna at Recipe Diaries. An easy delicious meal, a few libations, upbeat music, and great conversation are the ingredients for a fun evening with friends.

I like to serve a buffet on our kitchen counter and let everyone serve themselves. This is the same counter I prep food on so I put all the dirty dishes and things I use to cook go in dishpans and off they go to the top of my washer and dryer until it is time to clean up.

Then when it’s time to clean up I fill each dishpan with sudsy water and let them soak until I can wash them. This makes cleaning up so much easier.

My rhubarb galette can be turned into any fruit galette. And cherries are just coming into season now so we will be having Cherry Galette for dessert!

SUNDAY

It’s been a busy week of cooking. And a fun week with family and friends! So tonight’s dinner comes compliments of our freezer. I keep lots of homemade frozen soup for meals when I just don’t feel like cooking… at all!

Chicken Taco Soup will be easy and so good! I’ll make extra fixin’s on Thursday and save them for tonight’s dinner.

Here’s a super easy cornbread that tastes really wonderful. I call these recipes Doctor The Box recipes.

Preheat oven to 350 degrees. Put 1 box of jiffy cornbread, 1 can cream corn (8.5 oz), 1/4 cup sour cream, 2 eggs, and 1 TBS sugar in a bowl and mix until incorporated. Grease an 8 x 8 baking dish and add the corn mix batter. Cook for about 20 minutes until done through and slightly brown on top.

Aren’t these cookies just so pretty? I’m going to make them this week and then make them for my mother’s birthday. I love pretty food that tastes delicious too! And these cookies from Tricia at Saving Room For Dessert and gorgeous.
