Spring is so beautiful in Lancaster County! Our farmstand is open and we are getting lots of local asparagus and rhubarb so they are on the menu this week. Are you hungry? So am I! Here are 37 scrumptious recipes for you!

MONDAY- SOUP DAY

This week starts off with one of our favorite meals, Fish Tacos!

These are so delicious and healthy-ish! Add the topping you like to personalize them! The fish in these tacos are battered and fried but you can air fry them or broil it or make it your favorite way.

I love a recipe that is just so easy and colorful! YUM!

TUESDAY

One of the most versatile proteins to cook is chicken. And boneless, skinless chicken breast is a God-send for those of us who have to constantly watch our waistlines!

However, chicken breasts without the skin and bone can be quite boring because it lacks flavor! But that’s no problem really because there is so much we can do to add delicious flavors to chicken, like today’s recipe.

One extra step I’ve been taking with boneless skinless chicken is to brine it.

Here’s an easy brine that makes the chicken taste so so juicy and good: In a large zip-type bag add 2 cups buttermilk, 1/2 cup olive oil, 1 1/2 TBS coarse salt, two crushed garlic cloves, and a few dashes of hot sauce. Close the bag and squish with your hands to mix. Add chicken and refrigerate. When you are ready to cook the chicken pat it dry. This brine recipe is a keeper!

A big thank you to Nancy at Skinny Kitchen for this scrumptious and easy chicken recipe.

WEDNESDAY

My pasta loving husband will love tonight’s dinner! I’ve never made spaghetti pie so this is a new-to-me recipe from Jenna at Recipe Diaries.

I really like the idea of baking spaghetti so it holds together better! And I’m sure that will be just fine with Bobby!

I’m also making Grandma Lo Bianco’s famous meatballs. I have a batch out in the freezer. If you make one thing this week you should give them a try! They are soooooo delicious!

THURSDAY

Salmon makes almost a weekly appearance on the menu! Salmon and honey are the most wonderful combination! The flavors are perfect together!

Today’s salmon recipe comes from one of my favorite foodie blogs, Natasha’s Kitchen! Thanks, Natasha!

While asparagus is locally grown and abundant, we are eating it a couple times a week. And below is my favorite way to cook it!

FRIDAY

Friday night is “fun night’. I make an easy, yummy dinner and we watch a movie or play a game. And we often have people over to join in!

We love pizza so I’m making an easy skillet pizza. YUMMY! This delicious recipe comes from Jessica at The Recipe Critic.

I’m using my Master Dough recipe. This recipe is amazing! It makes a big batch of dough that makes bread, pizza dough, and more! I have it in my refrigerator waiting to be used.

SATURDAY

Oh, my goodness! I adore braised chicken! This recipe is like Nani’s Sauteed Chicken… with a twist! This chicken recipe is a homerun! And it can morph into so many flavor profiles!

Kristen, thanks for this amazing recipe!

And try the cabbage recipe! It is so yummy!

SUNDAY- LET’S GRILL

Tonight the grill is coming out for this wonderful, tasty flank steak! This is one of my favorite steaks! So easy to grill and it tastes so amazingly delicious!

SWEET TREAT OF THE WEEK

A galette is such an easy way to make a pie! It’s rustic and beautiful and gives us a look at what’s inside.

We can get rhubarb at our farm stand now and it is delicious! However, you can make a galette with any filling!

This pretty and tasty recipe is so easy to put together and perfect for family or company!

    Yvonne,
Thank you for all your work that goes into your On the Menu posts! One time you mentioned to save our woody asparagus ends, collect them in the freezer, and then we could make asparagus soup out of them. Would you mind posting your recipe for that sometime?
    Thank you so much,
    Melanie

Every link on your site for Perfect Roast Chicken says it’s an error page. One took me to the page for chicken pot pie. It looks sooo incredible and I would love to make it.

Could you please make sure we can get to the page for the recipe?

Thanks sooo much! Love your recipe choices!
