ON THE MENU MARCH 5TH
Today I’m heading to Costco, my favorite place to grocery shop in bulk! I’m heading right for the meat department and picking up some scrumptious salmon and chuck roast! I also buy two rotisserie chickens every time I’m there. I just can’t help myself. I’ll cut it all apart and save the bones for stock. YUM! This week some of the chicken will go into the freezer and I’ll use the rest for lunches. Chicken on a Caeser salad or made into Chicken salad is the perfect lunch in my book! What’s your favorite lunch? I’d love to hear!

I love Sunday dinners, especially when they include family! I try to keep food easy and comforting. I want to concentrate on the people I love!

I could use my slow cooker almost every night. I am a huge fan of getting food done ahead! And doing all the prep work in the morning frees up my evenings… and makes less dishes too!

Beef Bourguignon is just a fancy way of saying the best beef stew you have ever eaten! It’ is rich and scrumptious with a deep and complex sauce made with red wine! Oh, YUM! Company worthy but easy to make!

I’ve made this recipe for years and years! It’s a little bit of a spin on regular crab cakes. The corn is a sweet surprise!

this week for sure and maybe a pork roast.
My favorite but occasional lunch is half a deli meat sandwich, with cheese, mayo, dill pickle and lettuce, and Trader Joes “Fritos”. And an orange. And some Coca Cola. I could eat it every day, but I’m sure you can understand that I only have it a few times a year!!
You always have such lovely menus. I don’t know where I could find that much energy. We usually plan by the seat of our pants. It depends on how we feel at the end of the day. Sometimes I cook, other times hubby grills. Sometimes we’re too tired and hubby brings home take-out. I do save some of your ideas though and plan to make them at some point. They sound too delicious not to try!

I just bought a chuck roast. I think I will be making the beef bourguignon in my slow cooker.
I was at Costco last night and picked up two blade roasts for the slow cooker and three roasting chickens. I like to cook up my chickens at home because I love the crispy skin.
My lunch almost every day – mixed berries with pecans on top. It’s fresh and light leaving lots of room for scrumptious dinners.
Yummy looking recipes! Since my sister/brother-law will be visiting next week, I’ll serve one of their favorites-chicken spaghetti with salad of Spring greens, mandarin oranges, toasted almonds and my special garlic dressing, baguette from Sam’s. Another night, we will have a pork tenderloin with different colored miniature potatoes in a beef consommé, creamed cheese potatoes, green beans with balsamic/bacon auction and good ole’ Sister Schubert wheat dinner rolls. Hubby will grill burgers one night-he’s sure he has found the perfect seasonings! Of course, we I’ll have our grandmother’s oatmeal cookies!

The salmon recipe is very confusing. I looked up the Epicurus recipe. It said nothing about mayo yet you said spread it over fish. The Epicurious recipe did however mention mustard which you never mentioned. ?????

I love Dutch Babies but have never seen minis so will have to give those a try. I can always use another salmon recipe as well as I try to eat salmon once a week.

In answer to your question of what’s on my lunch menu well I often have what I refer to as a “yoga bowl”!! I like to have cooked quinoa on hand and add protein in the form of legumes (chickpeas, red kidney beans, lentils), cooked chicken or cottage cheese, hard boiled egg, nuts… Also, I add cooked beets, tomatoes, corn, red onions, lettuce, whatever I have on hand and strikes my fancy. As for a vinaigrette well it’s usually olive oil with balsamic vinegar reduction… Yum and healthy!
