Today I’m heading to Costco, my favorite place to grocery shop in bulk! I’m heading right for the meat department and picking up some scrumptious salmon and chuck roast! I also buy two rotisserie chickens every time I’m there. I just can’t help myself. I’ll cut it all apart and save the bones for stock. YUM! This week some of the chicken will go into the freezer and I’ll use the rest for lunches. Chicken on a Caeser salad or made into Chicken salad is the perfect lunch in my book! Beef Bourguignon is just a fancy way of saying the best beef stew you have ever eaten! It’ is rich and scrumptious with a deep and complex sauce made with red wine! Oh, YUM! Company worthy but easy to make!
I’ve made this recipe for years and years! It’s a little bit of a spin on regular crab cakes. The corn is a sweet surprise!
