It finally feels like summer! And summer means lots of herbs and flowers! You will find me every morning with my coffee out in my little gardens tending my flowers and herbs. Do you use herbs when you cook? I do too! And I’ll be adding lots of herbs to the recipes On The Menu this week!

MONDAY

Monday’s I need an easy go-to meal. I have an eagle eye for what will be easy and still taste fabulous! Both of these recipes look so beautiful! YUM!


Brining chicken is magic. It keeps cuts like boneless, skinless chicken breast totally moist. So I will brine tonight’s chicken for several hours before putting the rub on it.

Here is my favorite brine: 2 cups of buttermilk, 1/2 cup of olive oil, 1 1/2 TBS coarse sea salt, a few dashes of hot sauce, and two crushed garlic cloves. I whisked all the ingredients together in a bowl and added it and boneless skinless chicken breasts in a zip-type bag and refrigerated it. The chicken was so delicious and moist! YUM!

Before adding the rub I’ll dry off the chicken with a paper towel.

I’m always looking for a dish that has a delicious depth of flavor and taste but is surprisingly lower in fat and calories. The zucchini dish featured in this week’s menu fits that description perfectly! It’s a must-try!

TUESDAY

I could eat this soft taco for lunch every single day! YUM! I must admit I love taco seasoned ground beef so I might use a bit of ground beef and some ground turkey. Without the tortilla, this would be delicious in a lettuce bowl.

WEDNESDAY

I LOVE the flavors in Peruvian Chicken! I am so so excited to try this recipe. We have not started up the grill yet this season so tonight will be a first!

THURSDAY

Wow, these stuffed Mushrooms look amazing! I can’t wait to give them a try. Bobby LOVES mushrooms and he will love these with a little pasta!

I’m a huge fan of chopped salad. I usually get a great bagged chopped salad and make my own dressing. So worth the extra effort! Delish!

FRIDAY

Salmon in a bath of creamy lemony sauce. Oh, yes please Diethood!

SATURDAY

I love sandwiches with slaw! It’s the perfect combination of bread, meat, and crispy cabbage. So good. Thanks, A Blessed Mamma!

SUNDAY

When family comes for dinner I want an easy menu that is worthy of a Sunday family meal! This beef tenderloin looks like you need a culinary degree to make it but really I love cooking roasts because they are so very easy! Your best friend will be a meat thermometer to know when it is PERFECTLY done!

SWEET TREAT
