What do we do with thanksgiving leftovers? We use them to create easy and so delicious new recipes. Here are some of my favorite Thanksgiving leftover transformations!

CREAM OF TURKEY SOUP WITH APPLE AND FENNEL

Let’s start off with this beautiful soup. It’s a perfect way to use all that leftover turkey! This soup is full of earthy flavors filled with chunks of turkey and root vegetables with apples, fennel, and dry sherry!

MASHED POTATO PANCAKES

Oh, Christina from It’s A Keeper is singing my culinary song! I grew up on mashed potato pancakes. I can still see my grandmother’s beautiful worn hands forming these delicious bites and putting them in a cast iron skillet!

Mashed Potato Pancakes are a great way to transform Thanksgiving mashed potatoes. I will be making these over the weekend!
