Now that Thanksgiving is over I’m ready for lots of salads. But I am totally bemoaning the fact about the cautions about Romain lettuce. Because Romain is my lettuce of choice. So I’m using spinach and iceberg and arugula and mixed greens with no Romain! And just between you and me, I’m not a fan of kale is not a substitute for lettuce as far as we are concerned here at StoneGable! Moving on, I have lots of great, Romain-free recipes this week. I’ve gotten several emails asking what I eat for breakfast. Honestly, I’m not much of a breakfast eater. I’d be fine with a pot full of coffee but I know that is no way to start my day. So I usually drink a protein shake. Or I’ll eat a hardboiled egg and a piece of fruit. On the weekends Bobby makes breakfast and that usually includes eggs, breakfast meat, and toast. I’ll nibble a bit but I’m fine with just a bit of egg and a piece of bacon. I know it’s not very gourmet or fancy, but give me a protein shake and I’m a very happy girl!

I love to make chili and try different recipes. The great thing about chili is you can make a double batch and freeze it. Easy to pull out of the freezer when you don’t feel like cooking! Wonderful recipe from Fantabulosity!

There are so many reasons I love these meatballs. They truly are the best I’ve ever eaten. And they are easy to make. And they are a make-ahead meal. AND everyone loves them!
