ON THE MENU #216

Now that Thanksgiving is over I’m ready for lots of salads. But I am totally bemoaning the fact about the cautions about Romain lettuce. Because Romain is my lettuce of choice. So I’m using spinach and iceberg and arugula and mixed greens with no Romain! And just between you and me, I’m not a fan of kale is not a substitute for lettuce as far as we are concerned here at StoneGable! Moving on, I have lots of great, Romain-free recipes this week.  So here’s what’s on the menu…

I’ve gotten several emails asking what I eat for breakfast. Honestly, I’m not much of a breakfast eater. I’d be fine with a pot full of coffee but I know that is no way to start my day. So I usually drink a protein shake. Or I’ll eat a hardboiled egg and a piece of fruit. On the weekends Bobby makes breakfast and that usually includes eggs, breakfast meat, and toast. I’ll nibble a bit but I’m fine with just a bit of egg and a piece of bacon. I know it’s not very gourmet or fancy, but give me a protein shake and I’m a very happy girl!

MONDAY

Are you over your food induced brain fog from Thanksgiving? I’m done with stuffing for a month or so. Now I’m looking for recipes that are delicious and healthy and easy to make. Today’s recipe from Serena Bakes is a must try!

TUESDAY

I can’t wait to make this easy and light Sloppy Joes! We will eat them topless to lighten them up even further. And I’m making extra for lunches. Yum! Thanks, Rachel from Feast And Farm.

WEDNESDAY

I’ve never made pizza with a cauliflower crust, have you? But I know my family will love this pretty supreme pizza. Look at the colors! Wow! Beautiful recipe, How Sweet Eats!

THURSDAY

I love halibut, but it can be a bit pricey. So I wait for a good sale to buy it. So worth it! What a sturdy gorgeous fish! If you like fish like cod you will LOVE halibut. Thanks, A Family Feast!

FRIDAY

I love to make chili and try different recipes. The great thing about chili is you can make a double batch and freeze it. Easy to pull out of the freezer when you don’t feel like cooking! Wonderful recipe from Fantabulosity!

SUNDAY

 

There are so many reasons I love these meatballs. They truly are the best I’ve ever eaten. And they are easy to make. And they are a  make-ahead meal. AND everyone loves them!

We often eat them on their own sans pasta. But for this family dinner, we say bring on the pasta!

SWEET TREAT OF THE WEEK…

Let’s make dessert in a slow cooker! Yup, this recipe looks like it will be a big favorite at StoneGable. And I love almost any recipe I can use my crockpot! Thanks, Vikalinka!

  3. I made the Taco Soup for dinner tonight, and it was delicious! I did not have any cans of diced tomatoes, so I used a whole jar of salsa (home canned). It turned out great. It was quick and easy, too. Thanks for posting. Tina
