It’s so nice to put a meal in the oven and have the whole house smell scrumptious! It’s one of those little pleasures of life! Even our garage smells amazing on days I’m doing a lot of cooking. This week’s menu is a salute to fall and all its delicious aromas! YUM! Here’s what’s on the menu this week!
MONDAY
There is a secret ingredient that makes these fajitas the best you will ever eat! I posted this delicious main dish when I first started blogging. The images certainly needs improvement but the recipe does not! It’s a family favorite!!!!

TUESDAY
I grew up eating salmon cakes. But I make them a lot different than my Mom. I like to try many different versions of these famous cakes! Today’s version uses mashed potatoes in the mix and they are baked and not pan-fried. Sounds good to me! I can’t wait to give them a try!
If you have never made salmon cakes before you really should. They are delicious!
WEDNESDAY
I have never roasted a flank steak before. I usually grill it quickly. We love flank steak and this recipe makes this delicious meat easy enough for a weeknight meal. Leftovers will be used on Saturday and for lunches! I love food I can cook once and use another time… or two!
THURSDAY
We eat with our eyes first and this bone-in pork chop recipe makes me so hungry. It’s beautiful!!!!

The story goes that a chef after a long night of cooking for his clientele would make “bacon and eggs” with his pasta. And that is how Pasta Carbonara was born. However it came about it is a gift to the world! What an easy and sooooo delicious main dish. This dish should be in your culinary repertoire because it is great when you just don’t know what to cook and don’t have much on hand!
SATURDAY
Today’s fish pie is a first for me. It sounds divine! We’re having a couple friends over for a cozy fall dinner so I’m excited to have them also be taste testers!

October is pumpkin time and what’s better than infusing a coffee cake with delicious pumpkin flavor? I’m making this for a brunch party this weekend!

We had your Creamy Cajun Pork Chops and Perfect Roast Chicken this week. They were delicious! We used a store bought Cajun seasoning for the chops and found it it to be on the salty side so we are looking for a diy Cajun seasoning so that we can control the salt content. We did not follow the chicken recipe all the way. We injected the chicken with store bought Cajun style butter marinade and then buttered and seasoned the skin and cooked it on a bed of carrots, onions and celery. The chicken was a little dry but still good so we will need to figure out the proper time for our oven, but the veggies were divine! Thanks for the recipes!
