On The Menu April 4th

Need dinner ideas? Here's a week's worth of scrumptious dinner recipes plus more! Delicious main dishes, side dishes, vegetables, salads, desserts and breads! Lots of early spring recipes, too!

Oh, YUM! Today I’ve been making the most delicious asparagus side dish! I’ll be posting about this week! It’s asparagus season in Lancaster County!!! I just can’t wait to share all the great spring recipes On The Menu this week! Let’s go!

This post contains affiliate links! I’m sharing what I love in my kitchen and hope it helps you in yours!

I have a refrigerator filled with asparagus tops and a freezer filled with those woody ends. Don’t throw them away! They make amazing asparagus soup! I’ll share that with you soon too!

Here’s what’s on the menu!

MONDAY

You probably know by now I am obsessed with my Air Fryer! It makes such crunchy wonderful food! It was one of the best kitchen investments I have ever made! And it really was not very expensive!

I use it a few times a week and have even branched out into making breakfast recipes too like air fryer two-ingredient bagels, air fryer breakfast pizza, and air fryer donuts!

If you haven’t gotten aboard the air fryer craze you really should.

Today’s pretty salmon is made in an air fryer. I’m excited to try it!

Thank you Julia at Plated Cravings for the delicious salmon recipe!

TUESDAY

Once in a while, I get hungry for a good old hot dog. Bobby will grill them and I’ll cut up lots and lots of tasty condiments. We even buy canned chili to put on our dogs. And it tastes great!

WEDNESDAY

This has to be one of my favorite meals. Killer Fajitas are just so so good! The recipe is an oldie but goodie! The photography is awful but the recipe is a winner!

There is a secret ingredient in these fajitas that make everyone who eats them want the recipe!

THURSDAY

I’ve made this scrumptious COD PICCATA from Iryna from Lavender and Macaroons quite a few times. It is that good! And it is perfect for a weeknight and so company-worthy! This recipe begs to be made over and over!

FRIDAY

Thanks, Beth from Budget Bytes for this delicious flatbread recipe! The flavor profile could not be tastier! Caramelized onions, artichokes, and Feta cheese! Yippee!!!!

If you don’t have time to make the flatbread (but I suggest you should) you can use Lavash bread as the base for this recipe!

SATURDAY

Chicken Parmesan is one of Bobby’s favorite meals. Tonight I’m making this recipe and making it even yummier by using my air fryer. I love the crisp crunch of air fryer food!

When we get Italian take-out Bobby always orders Chicken Parmesan. No take-out tonight Bobby! Let’s make Chicken Parmesan at home!

A wonderful recipe from Jasmine at Stylish Cravings!

SUNDAY

Have you ever had Chimichurri sauce? If you haven’t you must give it a try! Oh, it kicks up the flavor of vegetables and meats and even fish!

Spring and summer are not spring and summer without homemade chimichurri sauce!

We are grilling flat steak and slathering it with this green sauce. It is just so good!

SWEET TREAT OF THE WEEK

One of my favorite sweet treat desserts is also very easy to make. A galette is a pie without all the fuss! I’m making a strawberry rhubarb galette. YUM! I’ll be substituting half of the rhubarb in my rhubarb galette with strawberries for a really delicious spring flavor.

This recipe is so versatile. Most fruit can be substituted with great success.

I like to serve a galette with a custard sauce or vanilla ice cream. Both are delicious.

SWEET TREAT OF THE WEEK #2

Have you tried NICE CREAM yet? It is amazing! With just a few healthy ingredients you can have a fabulous, good-for-you ice cream! The secret ingredient is bananas! When my bananas get too ripe I cut them up and make this amazing dessert!

If you have not made nice cream yet you really should. Thanks, FOODIE FIT FINDS for this sinfully good recipe!
