On The Menu 2nd Week Of April

Need dinner ideas? Here’s a week’s worth of scrumptious dinners and 45 delicious recipes! There are delicious main dishes, side dishes, vegetables, salads, desserts, and breads, as well as lots of early spring recipes!

It’s been raining for five days! The saying goes that April showers bring May flowers, so there should be a bumper crop this year. I hope April showers also bring spinach, snap peas, lettuce, radishes, leeks, and more! Here’s what’s on the menu this week…

Here’s what’s On The Menu this week…

MONDAY

You probably know by now that I am obsessed with my Air Fryer. It makes such crunchy, delicious food! It was one of the best kitchen investments I have ever made, and it really was not very expensive!

I use it a few times a week and have even branched out into making breakfast recipes, like air-fried two-ingredient bagels, breakfast pizza, and donuts! If you haven’t gotten aboard the air fryer craze, you really should.

I grew up eating salmon cakes. The Air Fryer Salmon Cakes are not my mother’s salmon cakes. Hers were good, don’t get me wrong, but these salmon cakes are amazing! I added a few ingredients that gave them lots of extra flavor. This blast-from-the-past main course has a crunchy outside and a tender inside. You will want to try the homemade tartar sauce. It’s easy and worth the extra effort.

If you don’t have an air fryer, you can saute it in a pan or bake it in the oven.

TUESDAY

I have a big love affair with Mexican food. As I’m writing this post, a pan of enchiladas is in the oven for dinner. Enchiladas are one of my favorites, and so are fajitas. Tonight’s dinner (on the blog) is a mash-up of fajitas and a quesadilla. Doesn’t that sound fantastic? Mary is cooking her fajita vegetables in a pan on top of the stove, but if the weather is not rainy, I’ll ask Bobby to grill them.

The main dish is paired with refried beans. I often make authentic refried beans using dried beans. It’s really easy. But an ever-easier version is to doctor up a can of refried beans. A Mexican dinner is a celebration in our home, and we always invite the “refrieds.”

If you are going to make the refried beans, you will also love how blender salsa tastes! The recipe uses fire-roasted canned tomatoes. It’s amazing!

WEDNESDAY

Tonight’s dinner is so fresh and has some of the best Italian flavors! If you are a fan of Caprese salad, you will love this main dish spin on it. Bobby will grill the chicken. He loves his grill and is very happy to grill unless we have sideways torrential rain.

Caprese chicken will look beautiful on a mound of tonight’s featured side dish. I am so excited to make this recipe. It has some of my favorite words in it… Greek, spaghetti, and garlicky. Do you remember spaghetti pasta salads? I kind of forgot about it. Danielle and Cameron, I’m so glad I found your recipe on Pinterest.

THURSDAY

I’ve made this scrumptious Cod Piccata from Iryna from Lavender and Macaroons quite a few times. It is that good! It is perfect for a weeknight and also company-worthy! This recipe begs to be made over and over! Thanks, Iryna.

I’m pairing this recipe with delicious Greek orzo, which complements the flavors in the main dish. For a fresh element for tonight’s dinner, I’m also serving creamy cucumber salad.

FRIDAY

It’s pizza night. Instead of making a traditional pizza, I’m going to serve the grownups something a bit different and delicious. We will heat up a couple of frozen pizzas for the kids.

If you don’t have time to make the flatbread (but I suggest you do), you can use Lavash bread as the base for this recipe!

SATURDAY

Chicken Parmesan is one of Bobby’s favorite meals. Tonight, I’m making this recipe even yummier by using my air fryer. When we get Italian take-out, Bobby always orders Chicken Parmesan. No take-out tonight, Bobby! Let’s make Chicken Parmesan at home!

SUNDAY

Have you ever had Chimichurri sauce? If you haven’t, you must give it a try! It kicks up the flavor of vegetables, meats, and even fish! Spring and summer are not spring and summer without homemade chimichurri sauce!

We are grilling flat steak and slathering it with this herby sauce. It is just so good!

SWEET TREAT OF THE WEEK

One of my favorite sweet treat desserts is also very easy to make. A galette is a pie without all the fuss! I’m making a strawberry rhubarb galette. YUM! I’ll be substituting half of the rhubarb in my rhubarb galette with strawberries for a really delicious spring flavor.

This recipe is so versatile. Most fruits can be substituted with great success.

I like to serve a galette with custard sauce or vanilla ice cream. Both are delicious.

SWEET TREAT OF THE WEEK #2

One of my favorite indulgences is lace cookies! These from Sally’s Baking Recipes are made with only six ingredients. They taste like brown butter and caramel. Yum! Thanks, Sally.

I like them just as much without the Nutella.

  5. I too am so inspired by your menu choices each week!! Can you give any tips for cleaning an air fryer? Mine seems to have built up some sort of film I can’t get off.

  6. Thank you so very much for the delicious recipes! I have a decorating question. I purchased a dark grey sectional,had it customed made, I always had off white and went dark this time. Bad mistake. What color pillows can I accesorize with?

    1. Brighten it up with textural light neutral pillows. Use one pillow that has warm tones to make the dark gray look more warm. Hope this helps.
