This week I’ve been thinking about how so much of our lives and wonderful memories revolve around the dinner table! Countless celebrations and holidays and milestone events, happy and sad, are celebrated with family and food! And this week we celebrate another! Here’s what’s on the menu this week…

I must say I’m spoiled! We have been so blessed to host so many celebrations of our family and extended family here at StoneGable and we have been able to be all together so often!

Here’s what we are eating this week…

MONDAY

This is one of the best years for corn I can remember. Corn is everywhere in Lancaster County. And this year the weather has been a perfect mix of sunshine, heat, and rain for corn. The corn is so sweet! So we are taking advantage of its freshness!

The tomatoes from our garden are also amazing! So we eat them with every dinner. Looks like we have a plentiful crop this season. So we love to share them with our family and neighbors.

TUESDAY

I could eat Chimichurri sauce with a spoon! It is a delicious combination of fresh herbs, garlic, and oil! And it works its magic best on a piece of grilled meat!

I love this recipe from Cheryl at 40 Aprons! I’ve used this recipe a few times already this summer! And it’s always a winner! Perfect for company and easy enough for an every night dinner!

WEDNESDAY

I make a mean fish taco! This is such a delicious summer recipe! I often fry the fish as the recipe calls for but I think we will grill it tonight! No matter how you prepare the fish, this is a wonderfully fresh tasting recipe.

THURSDAY

I just can’t get enough of this super easy recipe! I make it once a week and it has become a staple here at StoneGable! A big, big thank you to Stephanie at MOM.COM.

If you don’t have an Instant Pot think about getting one! It took me a while to warm up to it (pun) but now I can’t go without it!

FRIDAY

I have a big container of meatballs and spaghetti sauce in my freezer. So tonight’s meal will be easy and so delicious. What a win/win!

We try to make Friday dinners easy! And the meatballs and sauce in the freezer need to be taken out and cooked on low in the slow cooker for 2 hours.

SATURDAY

On The Menu Week Of July 25th- potato salad

Here’s my favorite recipe for making a delicious and flavorful hamburger…

For every lb of 80/20 hamburger, add one pack of dry Lipton Onion Soup Mix, 1 tsp Worchestershire sauce, and a couple TBS water. The secret is to mix the hamburger gently. If you mush it all together it will get tough.

When I was dating my husband my mother-in-law made icebox cake. And in homage to her, I have made it since Bobby and I got married.

SUNDAY-BRUNCH

Today let’s do brunch! You can have it for dinner, but we are eating late morning. Lots of family here and this is a breakfast everyone loves! It’s really our Christmas morning breakfast! So, Ho Ho Ho, Christmas in July!

TREAT OF THE WEEK

Blueberries and peaches are in season and I love taking advantage of eating from nature’s season!

This sweet treat looks not only gorgeous but so so delicious!

    I was perusing your weekly menu suggestions and came upon the classic icebox cake recipe. I’ve been making this cake for many years for my son’s birthday-his favorite! I live on Long Island and cannot find Nabisco’s famous chocolate wafers anywhere. Online, maybe, but you can just imagine the condition they’ll be in when they arrive! And the price for a box is outrageously expensive! Researching them I’ve found that Nabisco has removed them from store shelves. Are you finding the same problem?

    I’ve been reading and enjoying your blog for along time. Returning to Bird-in-Hand (where my daughter and I were staying) from a trip to the I Love Lancaster arts and craft fair many years ago and not being familiar with the area, I was so surprised to come upon and pass your beautiful Stonegable home! That was a really fun experience! And we love l visiting Lancaster County.
