The week between Christmas and New Year’s is such a nice week! Christmas is still in the air and the anticipation of a fun way to ring in the New Year is exciting!
After Christmas, however, I’m ready to settle down from all the wonderful and busy bustle of Christmas. And start a fresh routine. I love new beginnings. And this time of year makes me yearn for a clean slate in every way!
We do still have some Christmas company and fun things going on but everything is a little calmer now.
There are some recipes I can look at and know they will be a StoneGable favorite!
Today pork although lean can also be lacking in taste. Pork was much better when I was a girl! So lots of flavors must be added today to make pork the star of a meal. And Crunchy Creamy Sweet did just that and more!

FRIDAY- AIR FRYER DAY- NEW YEAR’S EVE
Even though it’s New Year’s Eve it will be a quiet one for Bobby and me. We are celebrating with my sister Lisa and husband Jim and we will play games and ring in the New Year with fabulous appetizers and champagne!
We will be eating these yummy chicken tenders as part of our appetizers. But I created a whole menu for you if your evening includes a very easy meal!
I LOVE my air fryer! It makes the crispy food I crave without frying and calories!

SATURDAY- NEW YEAR’S DAY
I know I should be a good wife and make Pork, Sauerkraut. and Potatoes today. It is what every house in Lancaster County will be cooking. Every house but ours! I am not feeling it this year. With a promise of a real New Year’s meal next weekend we are having Mexican food for New Year’s day!
This week’s Tex-Mex fix comes from 2 Teaspoons! This recipe looks like it will feed a crowd so I’m going to break it down and serve it in single-serve cast iron skillets. Thanks, Karen!
I actually crave a tamale. When I was in 8th grade we moved from England to Del Rio Texas. What a huge culture shock! I went from English elocution lessons to Spanish lessons in a matter of days. It was in Del Rio that I learned about Mexican food and tasted my first enchilada, tamale, taco, and more!
We had the most wonderful Mexican lunch ladies that were FABULOUS cooks. So I learned what authentic and so delicious Mexican food is.
To this day I need a Tex-Mex fix weekly! Who says Tamale Pie isn’t a great New Year’s Day meal?

I’m a youth of the ’70s! If you are, do you remember the first time to ate Bacardi Rum Cake? I bet you do! This cake takes like the Holidays to me! My mom served it every Christmas. And guess what? She is bringing for Christmas this year too!
