Need delicious lunch recipes? Do you ever get in a lunch rut? You know, when you stand in front of the refrigerator and think something different will magically appear? Lunch is often difficult when we don’t plan for it.

I’m not a big breakfast eater, so when lunch rolls around I want something a little more substantial. One solution for a lunch rut is to make a bit extra at dinner and eat it for lunch the next day. This is what I do quite often. Or I make things like soup in the morning so they are ready for lunch.

HERBY ITALIAN ORZO SALAD

I love a delicious salad that eats like a meal at lunchtime. This Italian salad is full of herby flavors, creamy orzo, olives, feta, and more! This salad would be great for lunch or dinner.

APRICOT BRIE GRILLED CHEESE ON CHALLAH BREAD

I love how Becca describes this sandwich, as ” the dessert of grilled cheese“. Just the image makes me want to lick my computer screen. LOL! It hits so many notes: sweet, salty, peppery, and buttery.

If you don’t have challah bread another enriched bread would work too!

BLT SALAD RECIPE

This salad has all the scrumptious aspects of a BLT but is far less messy!

This is such an easy recipe for me to assemble. I bake bacon in my oven and then freeze it so I can pull it out and microwave it until it sizzles. And I have hardboiled eggs on hand too. YUM!
