PUMPKIN SPICE BAKED OATMEAL

A hearty, pumpkin pie tasting breakfast. Too good to be good for you... but it is!

Ingredients

  • 1 ~ 15 oz can pumpkin puree
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 TBS pumpkin pie spice
  • 1/2 tsp salt
  • 3/4 tsp baking powder
  • 1 tsp vanilla
  • 1 1/2 cups milk
  • 2 1/2 cups dry old fashioned oats
  • 1/2 cup pecans chopped (optional)
  • 1/2 cup raisins optional

Instructions

  • Preheat oven to 375 degrees.
  • In a large mixing bowl add pumpkin, brown sugar, eggs, pumpkin pie spice, salt, baking powder and vanilla. Whisk together. Add milk and whisk until incorporated.
  • Add the oats, pecans and raisins to the pumpkin mixture and stir together.
  • Spray an 8 x 8 inch baking dish with cooking spray and pour the mixture into it.
  • Bake for 45 minutes until done.
  • Serve hot with milk. Pumpkin Spice Baked Oatmeal can be refrigerated and then reheated as needed in the microwave.

Notes

Other add ins would work in place of the pecans or raisins like other nuts and dried fruit. Even chocolate chips would be a special treat!
