ROASTED GREEN BEANS WITH BACON

Crips oven roasted green beans infused with smoky bacon flavor.

Ingredients

  • 8-10 slices of bacon I use thick cut hickory bacon
  • 1 lb fresh green beans I use haricot vert, a french green bean. I pronounce it like” harry-corvair”… close enough… I’m not french!
  • tomatoes for garnish optional

Instructions

  • Preheat oven to 425 degrees.
  • Line a rimmed baking sheet with foil. Lay bacon in a single layer. Cook until crispy done. My bacon takes about 15-20 minutes.
  • Remover the bacon to a paper towel lined dish.
  • Trim the stem end of the beans, if needed. I only do this if they beans have been sitting in the frig for a couple of days.
  • Put the green beans in the pan and roll them around to coat with bacon fat.
  • Roast for 10 minutes with the rack in the center of the oven, or until the are still very crisp but have lost that “raw green taste”. Toss once during cooking.
  • Turn on the broiler… leave the rack where it is. Watch the beans so they don’t burn, and broil for up to 4 minutes. This will give some a little char! YUMMY! *If there is too much bacon drippings you may want to spill it out before broiling so it does not catch on fire.
  • Meanwhile, chop up a few pieces of bacon and tomatoes, if desired.
  • Plate and put the bacon along the center of the green beans. Top with tomatoes in the same way.
