Tomato Peach Cherry And Burrata Salad With Herb Vinaigrette

A scrumptious summer salad with a mix of sweet and acidic cherry tomatoes and in-season juicy peaches and sweet cherries. With creamy rich Burrata cheese and drizzled with an herby vinaigrette and sprinkled with pinenuts.

Ingredients

Salad Ingredients

  • 1 1/2 cups cherry tomatoes, cut in half
  • 2 peaches cut about the same size as the cherries
  • 1 cup of pitted sweet cherries, cut in half
  • 8 oz Burrata cheese room temperature
  • 1/4-1/3 cup pinenuts toasted
  • 1/4 cup torn basil leaves

Herb Vinaigrette

  • 1/2 cup olive oil
  • 1/4 cup white balsamic vinegar
  • 1 tsp honey
  • 1/2 shallot finely minced
  • 1 TBS dill finely chopped
  • 1 tsp thyme leaves
  • 1 tsp basil leaves finely chopped
  • salt and pepper to taste

Instructions

Make The Salad

  • Arrange the cherry tomatoes and fruit on a large platter.
  • Break the Burrata in two and put it at the edge of a plate.
  • Drizzle the dressing over the salad.
  • Sprinkle with the pinenuts and torn basil.
  • Garnish with extra basil and thyme.

Make The Vinaigrette

  • Put all the vinaigrette ingredients into a jar with a tight-fitting lid and shake to incorporate all the ingredients.
  • Salt and pepper to taste and shake again.
