An authentic Scottish shortbread using just 3 ingredients. Perfection!
Preheat oven to 350 degrees. Prepare baking sheets with parchment.
In a large mixing bowl, cream sugar and butter together on high speed until light and fluffy. Mix in the flour one cup at a time up to 4 cups. Keep beating the mixture on low speed.
If the mixture is too shaggy add more flour until a soft ball is formed.
Take the dough and form it into a disc, wrap it in plastic wrap and refrigerate it for 30 minutes.
Flour a working surface. Roll the dough out to about 1/4 inch and cut it out with cookie cutters.
Bake for 10-12 minutes until slightly golden brown on the bottom.
