Let’s make a summer sweet treat… strawberry hand pies! These hand pies are so so easy to make and even easier to eat on the go!
Hand pies can be made with any in-season fruit… but strawberries ripe and ready now…
I adapted this recipe from Martha Stewart’s hand pie recipe. It’s the best hand pie dough I have ever used. So easy!
STRAWBERRY HAND PIES
2 cups fresh strawberries, hulled and cut in quarters
2 TBS sugar
1 TBS cornstarch
1/2 tsp grated lemon peel
flour, for work space
2 1/2 cups all purpose flour
1 tsp sugar
1 cup cold unsalted butter (2 sticks) cut into small cubes
1/4 to 1/2 cup ice water
1 egg, lightly beaten
sanding sugar (or regular sugar)
Put strawberries, 2 TBS sugar, lemon peel and cornstarch in a bowl and stir to incorporate and set aside.

Wow! The recipes from the past few years are printable. That would be a huge amount of work. Just cut and paste to a page. Hope this suggestion helps.

Saving this recipe, they look so good. I love your extra touches, the string around the pies …..I would like the recipe for the pumpkin for this…..hopefully the lady that mentioned making these, will share her recipe.

I tried these the other day, and they were great. For the filling I used peach, and now I will try with pumpkin. My daughter in law really liked them! will try again with another kind of filling. Thanks.

Lucky me! I live near the Winter Strawberry Capital in the U.S.! We celebrate strawberry season in February here in Florida, but twist my arm just a little, and I’m traveling north to Vermont in July for family reunion – oops, just hit strawberry season again! Should I put the first handpie on a cookie sheet and put in the refrig while I finish making five more? Or is it ok to let it sit on the counter while I make the rest of them? I might be kinda slow in doing this for the first time. Can’t wait to try. Looks oh so wo-nderful.

They look delicious, Yvonne! I used to love eating the fruit hand pies that – who had them years ago, Hostess? – when I was a kid. Now that I have to eat gluten free, its probably a good thing I can’t eat them. I’d have way too many!

My grandmother that passed recently used to make these with cherries. I never had the recipe so I’m happy to see you posted this. I will have to make these for my dad who loved them. Maybe for the fourth!
