ON THE MENU WEEK OF MAY 28TH
Happy Memorial Day Weekend! I hope you are off and relaxing and doing fun things! Please remember to take a little time and think of the sacrifices men and women who came before us and have helped to keep us free! Especially those who gave the ultimate sacrifice! A big thank you to today’s servicemen and women for their good work and their families too! Now, here’s what’s on the menu this week…

MONDAY- HAPPY MEMORIAL DAY
Today we are having a big All-American cookout! I LOVE cookouts and all the food that goes with it! How about you? If you make one thing this week it should be the potato salad. It is my Nani’s recipe and I know it will be the best potato salad you will ever make!

I’m heading to the fishmongers today to get the freshest fish to grill whole. I lived in Britain as a child and really loved how fish with the bones taste. It’s also fun to pick the meat out around the bones… or vise versa!
If this is a little out of your comfort zone you should really stretch your culinary skills and give it a try!
We could eat pasta almost every night. But we try to limit it to one night a week. I’m going to have trouble with portion control. Boy, does this looks amazing!
Ole’! This is what I say about today’s menu!
I actually remember the first time I tried Sweedish Meatballs. I’ve been smitten ever since! I’ll make a big batch of meatballs and freeze them for another day. I love cooking in big batches!

Do you know about zoodles? Zucchini noodles? They aren’t bad. Well, that might be a little bit unfair. Actually, they are quite good. I like to mix them with a cup of real pasta to really get that authentic mouthfeel!
