Bobby and I have a new hobby. We both got bikes and are starting to ride the many rails to trails in our area! How fun! Biking is great exercises and I can’t believe all the places we can ride and sights we can see even in our local area! And on the food front here, our garden is bursting with all kinds of veggies! Here’s what’s on the menu this week!

We love salmon and try to eat it least one meal a week. I also make extra for a lunch or two with a salad. I’m all about doubling up on a recipe to make other meals easy!

One skillet and pasta? Oh, Bobby will love this for two reasons… pasta and easy cleanup! After all, he does do the dishes. Lucky me!
THURSDAY- SLOW COOKER DAY
Beef brisket is fabulous slow cooked in a smoker all day but when we don’t have time to tend it all day I opt for the slow cooker! This recipe looks scrumptious!
There are two words that make me weak in the knees in this recipe. Chimichurri- a divinely garlicky sauce filled with herbs… and spatchcock- the best way to get a crispy chicken! I can’t wait to make this recipe!
The key to perfect scallops is to get a golden crust on the outside of them. And of course, NEVER overcook them! Scallops are a favorite of mine!
SUNDAY- EASY SUNDAY DINNER
It’s nice to have a quiet Sunday afternoon and evening. It’s just Bobby and me so I’m making a Tex-Mex favorite… in soup form! And the slow cooker will do most of the work! We just may eat this while watching a movie!

When it’s strawberry season I get a little crazy making everything I can think to put this summer fruit in! These had pies are so much fun to eat and look how pretty!!!! You will love them!
