ON THE MENU WEEK OF JULY 9TH- Do you know what to make for dinner this week? I have a whole week's worth of scrumptious dinner menus planned for you!

I had family here last weekend and they had fun picking through my veggie garden and harvesting boxes and bags of produce to take home with them. It does my heart good to have nature’s bounty in my backyard and to share it! Right now fennel, cabbage, onions, leeks, cucumbers, and zucchini are in full maturity! I’ll be eating from the garden this week! Here’s what’s on the menu…

MONDAY

Salmon is on the menu weekly at StoneGable. Thank goodness it is so versatile and there are so many ways to prepare it. I love a little sauce with my salmon and this recipe has a great one!

If you like corn on the cob don’t miss the recipe on today’s menu. I make corn on the cob in the microwave husk and all. Super easy and soooooo delicious! No need to boil water and when corn is cooked in the microwave the husks and silk slip right off!

TUESDAY

I’m making extra Balsamic Garlic Chicken to have on hand for lunches. Simple, simple ingredients with tons of summer flavor!

WEDNESDAY

Crab is a very healthy option if you are watching what you eat. Even with a little mayonnaise and breadcrumbs, these crab cakes are a great healthy choice for dinner (5 Freestyle Weight Watcher points each). I’m forgoing the aioli and will use lots of lemons.

THURSDAY

Do you have an air fryer? I just got a toaster/oven/convection oven/ air fryer all in one. Many nights it’s just Bobby and me so we don’t need to heat up the stove for a meal. And the air fryer on our little Cuisinart oven is amazing! Really crisp food without the fat! To see the one we have and highly recommend go HERE.

FRIDAY SOUP DAY

I’m getting my Tex-Mex fix today in soup form. Scrumptious. I’ll be making a double batch for lunches!

SATURDAY

The fennel is growing like weeds in my garden. I’m so excited to make this exquisite recipe!

SUNDAY

I know this recipe will be divine. But I’m making it solely for the gorgeous picture! I’ll probably make this in my fluted rectangle tart pan.

TREAT OF THE WEEK…

Our peach tree has some luscious fruit on it! So we better eat those juicy peaches before the beetles do.  What a healthy and decadent recipe!
