I hope you are all doing well and staying safe! Last evening our extended family got together on a Zoom call and it was more than wonderful to be with all of them, even if it was virtually. I hope you are finding creative ways to connect, love and feel loved! I’m always right here if you need a bit of a distraction and a virtual hug! Now, here’s what’s on the menu this week…
MONDAY
I’m so excited to make tonight’s dinner from Barbara at Butter And Baggage!
You know my love of Tex-Mex food and this recipe is easy! I have one pack of chicken left in the freezer and this recipe is worth using THE LAST CHICKEN!!! I hope you can get the ingredients to make this really yummy dish!
We have three cans of vegetarian refried beans in the pantry. So I’ll be using them this week.
- QUESO CHICKEN
- CORN TORTILLAS
- REFRIED BEANS
TUESDAY- SOUP
I’m part Hungarian and Polish so this cabbage roll soup speaks to my roots! Thank you so so much, Jaclyn at Classy Cooking. This recipe looks just so delicious! Jaclyn is an amazing foodie blogger!
I’ll add a pound of Bob Evan’s sage sausage to the hamburger. And a can of tomato soup to the mix too! This makes the soup taste like my Nani’s.
- CABBAGE ROLL SOUP
- HOMEMADE SOURDOUGH BREAD
WEDNESDAY
We eat Pasta Carbonara pretty regularly at StoneGable! It’s such an easy meal!!! As long as I have eggs, parmesan cheese (yes, I use the green container shaky kind for this recipe) bacon and pasta I can make this in less than 30 minutes. And it’s company worthy!
Don’t miss the salad dressing post below. It’s an oldie but goodie. It’s a primer on how to make both oil based and creamy salad dressings. I don’t like bottled dressing (except Gazebo Room Greek Dressing and NOT the lite version). Making homemade salad dressing is so easy and so so much better than anything (except Gazebo Room) that comes out of a bottle.
THURSDAY- SLOW COOKER
Thursday’s used to be Bobby’s long day. But because of the pandemic, Thursdays are shorter. Another Penn State Medical office in our area has joined Bobby’s office to let some of the medical staff stay at home.
They are not seeing non-acute visits. That’s so healthy people do not get sick. It’s amazing to see how the office has transformed to help people stay healthy through this pandemic!
A tent is in the front parking lot to check people in. And patients wait in their cars until they are called into a room.
The protocol is amazing! So much change in such a short amount of time!
So Bobby is home earlier on Thursdays! That is a win for me!!!! I really love having him at home.
So far he is healthy. And as long as he is healthy so am I! But I can tell the magnitude of COVID19 is on his mind.
Tonight I’m making an absolutely sublime recipe from Serene at House Of Yum that Bobby will really enjoy! It’s important to do things special for those we love!
My daughter-in-law Abigail made it for us and we all loved it so I’m giving it a try!
- SLOW COOKER PORK CARNITAS
- REFRIED BEANS
FRIDAY
I made air fryer cod last week and it was scrumptious! I off-roaded and did not follow my menu because I just found frozen cod in the freezer and got hungry for it! So I tried it in the air fryer.
It was DELICIOUS!!!! I’m so excited for you to try tonight’s cod recipe from Tatiana at Berry And Maple.
SATURDAY

SUNDAY

- SPIRAL HAM IN AN OVEN BAG
- THE BEST POTATO SALAD YOU WILL EVER EAT
- ROAST ASPARAGUS
SWEET TREAT OF THE WEEK
This week I’m making this beautiful lemon loaf cake for Easter. It is moist and lemony and a perfect spring dessert!

Have a blessed Holy Week, Friend!

Made and served the lemon loaf cake for Easter dinner, it was delicious and easy to make. Will definitely bake again when we can share with our family .
So glad you liked it Margaret!
I love your on the menu posts! Last weekend I made your coleslaw recipe. It’s the only one I make. My son ate 2 helpings I will be making some of these recipes this week!
Yvonne,
I so enjoy your blog, recipe sharing & decorating…thank you for sharing! My question is; where do you find paper napkins as demonstrated in clay pot & egg mod pod ?
Thank you, laurel
Look in the post. I have them linked. I found them on Amazon.
Really wanted to try the queso chicken but was unable to as my computer alerted it as a site with viruses or malware. Just wanted you to know.
It comes up fine on my computer. Here’s the link:https://www.butterandbaggage.com/queso-chicken/#wprm-recipe-container-8074
I made it last night and it was a BIG HIT!!! I hope you try it!
Love your blog. I look forward to it everyday. Just a question…Is that 4 cups of mayo in your potato salad? Be well.
It’s a huge bowl. Try less and then add more.
The dressings all sound delicious! I will have to try the creamy Italian for sure! What does Bobby do for a living? It sounds like he is maybe in the medical field?
Hi Deb, he is a doctor. Please keep all the people healing us in your prayers.
Thanks for posting all of these wonderful recipes, it makes things seem somewhat normal which nothing about this is normal. A special thanks to your husband and his staff and all of those wonderful people who are working on the front lines fighting this virus. I get so tired of having to stay home and then I think of all those people in healthcare that would love to have a day of doing nothing. I think it is important to let people know how people in healthcare and other professions have to adjust to a new normal.
Thank you, Betty!
