MONDAY- SOUP DAY!
Here’s the skinny on this glorious soup! I literally made it skinner. Here’s how you can too. Trade out the cheese for 1 cup regular extra sharp cheddar and 1 cup lo-fat cheese (aka cardboard).
Change out the heavy cream for 1/2 cup lo-fat milk and 2 TBS heavy cream. If it is too thick add a bit of water.
This soup serves 8 and is 4 WW Smart Points. Roasted Cheesy Cauliflower Soup is very filling! Serve it with a slice of crusty bread (small slice).

How do you plan for a heartier, more point intensive dinner? Here’s what I do. I start my day by counting dinner and then count lunch and finally breakfast. I find I can eat one or two hardboiled eggs for breakfast along with a fruit for zero points.
Then I usually have a big salad and a zero point protein along with a homemade salad dressing and a few nuts or fruit or croutons added in.
And I use the WW app on my phone and computer. They are amazing!!!!!

Wednesdays are such nice middle of the weekdays! Bobby has the afternoons off and I like to make a nice dinner. Sometimes we have friends over for a fun evening and sometimes it’s just the two of us.
I’m a little addicted to Bananagram so we just might have to have a rousing game. You can see this fun, fast-paced word game HERE.
I love a great roasted chicken! It makes my house smell divine and makes enough for dinner and lots of leftovers! And I save the carcass to make my own stock.
This sounds silly, but when I roast a chicken I feel like I am doing life right!
It is tempting to default to a store rotisserie chicken. But they are often small and overcooked and dry! They lack flavor and succulence! All but Costco’s chicken. Buy them!!!!
Try roasting your own whole chicken. It’s easy and wait till you taste how delicious it is!

Friday’s are laid back meals! Bobby and I often catch up on a Netflix series or watch a great movie and eat dinner in the family room!
This week we are having these beautiful tacos from Serene at House of Yumm
For me, it’s all about the sauce! Even a little pan sauce make any meat taste so much for delicious! So, while Bobby scoops the sauce over his food I sprinkle it. And even a sprinkle is like heaven!
