Fall flavors are on the menu this week! I’m still enjoying all the apples from our tree and the tomatoes in our garden! Do your menus change with the season? I love to cook new things that are in season. So here’s what’s on the menu this week…
MONDAY
I’ve been on a pork chop kick lately! I’ve found a wonderful local butcher who’s meat is just heavenly. And his bone-in pork chops are really full of flavor!
I think pineapple and pork are such a great food pairing! So I’m making this pretty pork recipe from Fit Slow Cooker Queen.

This week’s Tex-Mex fix is a delicious Chicken Enchilada Bake from Jamie at Life Is Sweeter By Design. What an easy yummy recipe!
Growing up I never ate food with a spicy Mexican profile until my Daddy was stationed in Del Rio Texas on the Mexican border. Oh, my goodness! Those darling Hispanic cafeteria ladies sure could cook! And my favorite day of the week was Enchilada Day!
I’ve eaten lots of enchiladas trying to find one that is even close to my 8th-grade lunchroom ones but none have come close! But all of them conjure up memories of the smiling faces of the wonderful “lunch ladies”!
FRIDAY
A slow cooker is a wonderful thing! And one of my favorite things to make in it is a chuck roast! It is fall-apart tender and full of beefy flavor! And isn’t this a beautiful looking roast from Karlynn from The Kitchen Magpie!
I’ll save leftovers for sandwiches! Sometimes leftovers taste better! Right?

Do you have an air fryer? They are magical! My sister has one that looks like a big black bullet. Mine is a toaster oven/ toaster/ air fryer/ and more. But it really does a fabulous job!
And the best thing is that I can cook many dinners for Bobby and me in it too!

FOOTBALL SUNDAY
We are football people! And after church, Sunday’s are for FOOTBALL! I made an easy dinner at halftime and we eat dinner watching the second half of the game unless our team plays at night!
