I love this time of year when winter comfort food slowly begins to mingle with lighter, brighter dishes. You’ll find hearty soups, simple weeknight meals, a special brunch idea, and a few desserts that are too good to pass up.

Let’s see what’s on the menu for the third week in February…

There is nothing better than starting the week with a big pot of soup simmering away in the slow cooker. Monday just feels like a soup day to me, especially this time of year when winter is beginning to loosen its grip, but we still crave something warm and cozy.

Slow Cooker Mexican Street Corn Chicken Soup is hearty, flavorful, and just a little bit fun. It has that creamy, slightly spicy goodness that makes you go back for another bowl. I love that I can get it started early and let it do its thing while I take care of everything else that needs attention on a Monday.

I’m serving it with Homemade 5 Minute Salsa and plenty of crunchy tortilla chips. The combination is so good, and it makes dinner feel relaxed and happy. A warm bowl of soup, a little crunch on the side, and dinner is done. That’s my kind of Monday.

There is something so comforting about a perfectly roasted chicken. It feels simple and homey, but it always tastes special.

This week, I’m making a whole roasted chicken with honey sage roasted root vegetables. It is one of those dinners that gives you a wonderful meal tonight and leftovers for the rest of the week. I love knowing nothing goes to waste, and that one chicken can turn into so many good meals.


Midweek calls for something a little lighter but still full of flavor. Pan Seared White Fish with creamy potatoes feels fresh and satisfying without being heavy.

I love pairing it with my Asian Ramen Noodle Salad for a little crunch and brightness. It is that perfect in between dinner, still cozy enough for February but with a hint of the lighter meals I start craving this time of year.


Thursday dinners need to be easy and family-friendly, and this one always disappears fast at my table. My grandkids love it! Kicked Up Cornflake Chicken is crispy on the outside, tender on the inside, and full of flavor.

I’m serving it with Baked Cheddar Broccoli Rice Cups for a cozy, comforting side. This is one of those meals that feels a little fun and simple enough for a busy weeknight.

Friday night feels like the perfect time for a tried and true favorite. Grandma LoBianco’s Famous Meatballs are one of those recipes I could make without even looking at the directions. They are tender, full of flavor, and always a hit. The best part is that I make them ahead and reheat them.

I’ll serve them over fresh spaghetti with La Scala Famous Chopped Salad on the side. It is a relaxed dinner with a few close friends, allowing everyone to linger at the table a little longer. Serve with a good bottle or two of red wine.

It’s a busy week for inviting friends, and Saturday night we have overnight guests. I love dinners like this, good food, lots of talking, and no rushing.

French Onion Chicken Casserole feels perfect for our company. It’s rich and full of flavor, and I can prep ahead so I’m not tied to the kitchen. I’ll serve it with wild rice mushroom pilaf, roasted asparagus with garlic and lemon, and my arugula salad with parmesan and pine nuts. Simple, cozy, and I know our friends will love it.

BAKED CHICKEN DISH

Sunday morning is brunch for my overnight guests, and I always love making it feel a little special. There is something so nice about gathering around the table in the morning, coffee in hand, and no one in a hurry.

Easy Puff Pastry Eggs are the star, flaky, golden, and impressive without being fussy. I’ll add thick, wood-smoked bacon, a fresh fennel-orange salad with pomegranates, and a loaf of streusel-topped banana bread that I’ll get out of the freezer. It is a relaxed, pretty brunch that lets everyone linger just a little longer before the weekend ends.

Every good week needs a little something sweet, don’t you think? This one definitely does.

I’m making a beautiful chocolate cake and a couple of batches of my Barely Baked Chocolate Chip Cookies with Sea Salt. Those cookies are soft in the center with just the right sprinkle of salt on top. They never last long at my house.

  2. I’ve been on the fence about getting an air fryer, but your recipe ideas have me seriously considering getting one. One question I have is which size to get? It’s just me and my husband at home but we often have kids and grandkids here for dinner. Well, pre-Covid anyway. I also like to make enough for planned leftovers as we run a business and I work part-time. Any thoughts on what quart size might be a good choice? Thank you!

  3. Oh my goodness, Yvonne. Please disregard my last question about sweet pepper spice. I thought I saw Tbsp after it on the chili ingredients. Sweet peppers are red bell peppers here in Canada. Sorry about my confusion. I’ve got my shopping list ready for the store now to try your chili recipe. Comfort food at its best on a cold Winter day.
