MONDAY

I love to start my work week off with an easy menu. We grilled on Sunday so I grilled a few sweet Italian Sausages on the grill and I’ll warm them up for tonight’s dinner.

I’m so excited to try this new-to-me zucchini casserole from Blair at The Seasoned Mom. What a fun blog name! I love trying new recipes. How about you?

Zucchini grow like weeds in our area so we will have plenty of them this summer. Our farm market carries zucchini almost all year long so I’m hoping this recipe will be a big favorite so I have another use for these fast-growing veggies!

TUESDAY

I must admit I have a love/greatly dislike relationship with pork. First, the pork I ate as a child was so so flavorful but now has lost a lot of its succulent yumminess. And pork can be dry. So basically the pork from my childhood that had most of the fat that makes pork taste like pork and stays moist and juicy bred out of it.

On the other hand, the pork of yesterday was really not healthy no matter how good it was.

So what do we do if we love pork but don’t like the missing fat? We add flavor and cook it so it does not dry out.

Enter today’s glorious recipe from Anne at Upstate Ramblings. Anne adds a rub to give tonight’s pork tenderloin tons of flavor and cooks it in an Air Fryer which makes it crisp on the outside and juicy on the inside. Thanks for this wonderful recipe, Anne!

WEDNESDAY- GRILLING NIGHT

Wednesdays are often grilled dinners in the summer. So I’m making this delicious salmon recipe from Natasha at Natasha’s Kitchen and Bobby will grill the salmon.

I really like the use of limes in this recipe instead of lemon. Lime will give this recipe a really nice note of freshness. I’m also making Nani’s Sauteed Rice and I’ll grate a little lime zest into the rice when it comes off the heat.

We try to eat salmon once a week. But let me stress T-R-Y! It’s heart healthy and delicious.

THURSDAY

Look at this glorious dinner salad! One thing I don’t like about salads for dinner is that they don’t stick to my ribs very long. Not so with Grilled Chicken Caprese Salad! Oh yum, yum, yum!

Since Bobby is grilling on Wednesday we will grill the chicken too and save it for tonight’s dinner from Danae at Recipe Runner. All I have to add to tonight’s dinner is a very crusty Baguettes.

I think this would be a perfect lunch to serve for a girlfriend’s lunch. It looks so pretty and everyone can take what they like! Perfection!

FRIDAY- PIZZA NIGHT

Friday nights are family nights around here. Since our son and his family moved “home” and are now living in Lancaster County I’m so thrilled to have them here for Pizza and a movie. The movie is our almost 4 year-old Emma Kate’s pick.

For tonight’s pizza I am making this delicious flatbread. Actually, I am making two. One spicy and one not spicy.

Last week’s Strawberry Icebox Cake from On Sutton Place was a huge hit and EK added the strawberries on the top. This week I’m trying another no-bake recipe and I’ll let EK put the topping on it too!

SATURDAY

Swedish meatballs are such great comfort food! But they can be very high in calories and fat. That’s why I make and love these scrumptious Swedish meatballs from Gina at Skinny Taste.

I’m paring them with wide egg noodles and Air Fryer broccoli. Bobby, my pasta lover, will be thrilled with dinner tonight.

SUNDAY- HEADING TO A COOKOUT

Tonight we are heading to my son and fam’s house for a cookout. I’m offering to bring the meat and the the salad and we are breaking in his new grill and pool. I am praying for warm weather!

SWEET TREAT OF THE WEEK

Sometimes you just need chocolate! And when you do try making this amazing microwave brownie from one from my friends, Ann at On Sutton Place.

This is a really delicious recipe. All I want to do is put a big scoop of vanilla ice cream on that brownie and lick my computer screen. Sorry! Not sorry!

  1. Yummm!!! I’ll try the salmon. I love salmon and have to have it every week. Swedish meatballs and the chocolate dessert for one are a must try.
