ON THE MENU 202

There’s something that all of the recipes have in common this week. They are all very simple and delicious. After the hustle and bustle of Christmas, I want simple meals with lots of scrumptious flavors! And that’s what’s on this week’s menu!

Let’s cook good food this week!

MONDAY

Soup begins our dinner cipes this week! We are huge soup eaters. Both Bobby and I grew up eating homemade soups.

Soup for some reason always reminds me of the scene from Oliver Twist when the little boy Oliver holds up his empty bowl and says, “please sir, I want some more”. We almost always want some more!

I’ve never made Chicken Orzo soup so I’m excited to make this gorgeous soup from Natasha at Salt and Lavender. I bet it will be a family favorite! Salt and Lavender is a StoneGable Foodie Favorite Blog!

TUESDAY

I “stop for puff pastry”! I’m a huge fan! And I think galettes, rustic free-form tarts, are just the most beautiful things. So tonight’s recipe joins these foodie loves together with spinach and feta and other savories to make a mouth watering dinner!

These galettes would make a fabulous breakfast treat with a fried egg over the top. YUM!

WEDNESDAY

Scallops are one of my favorite foods! And they are very calorie friendly! These beauties are cooked in butter. To keep the calorie count down I’ll be careful to spoon just a little bit of that gorgeous sauce (oh, that’s hard) over my serving.

THURSDAY

Tonight’s dinner can be made in just 30 minutes! Wow! And it’s a family favorite! That is a big win/win! Because on most nights, I’m feeding just Bobby and me so I adjust the recipe for two. But for other recipes, like tonight’s Lo Mein, I make the whole recipe for lunch leftovers. And the flavor only gets better!

FRIDAY

I sing the praises of an Air Fryer!!! I didn’t always feel that way. I actually gave my first Air Fryer away.

Then I learned some great tips to almost ensure a crunchy outside. This winter look for a blog post all about the best tips for using an Air Fryer.

SATURDAY

I love easy dinners that are company worthy too! Chicken Lombardy reminds me a little bit of Chicken Marsala. It has some of the same flavor profile. Both chicken and mushrooms are so much better because of the fortified wine.

Please leave in the Marsala it has such an amazing flavor that cannot be reproduced.

I’ll make a spaghetti pasta and toss it lightly with olive oil, butter and Parmesan cheese.

SUNDAY

Tonight’s salmon recipe is just so yummy! And so so easy!

Salmon is something we try to eat once a week. And there are so many great ways to prepare it, like tonight’s recipe.
