Here’s something new On The Menu… I’m sharing some of my everyday easy recipes I love and use. StoneGable is a decorating blog but on Fridays and a couple times a month I post recipes. I really love to cook and love to share great recipes.

So I’ll be adding some of my best recipes and easiest recipes I use often in the body of some of the daily menus. I hope you enjoy them.

MONDAY

Even in the horrible heat and sweltering humidity of July, we are having soup for dinner tonight. And this soup from Mary at Barefoot In The Kitchen is a winner! Barefoot In The Kitchen is a StoneGable Foodie Favorite blog!

Lasagna soup is a meal in a bowl and Bobby will love this soup! I love it because on a busy Monday it’s so easy to prepare and it looks so delicious!

I just might put a jar of marinara sauce in the soup too! YUM!

It’s always a good idea to cut rich food with something that has an acid profile so I’m pairing it with one of my very favorite salads! The lemon vinaigrette is scrumptious!!! I make a batch up ahead and keep it in the frig to pour over salads and raw veggies.

Here’s an easy puff pastry breadsticks we will be making too…

1 package puff pastry, 1/2 cup grated Parmesan cheese, olive oil,1/2 tsp dried Italian herbs, sea salt

Preheat oven to 400 degrees.

Put the pastry on a lightly floured workspace.

Roll out a little bit. Cut into 3/4 inch strips, lengthwise.

Brush both sides of breadsticks with olive oil.
Put grated cheese on parchment paper or on a large plate. Sprinkle with Italian herbs and mix.

Drag pastry strip through Parmesan cheese on both sides. Twist and place on a large rimmed baking sheet lined with parchment paper.

Sprinkle with sea salt. Put on a baking sheet and bake for 10 minutes. Watch them so they do not burn. Cool on a wire rack. Serve.

TUESDAY

We try to eat fish a couple times a week. And we are especially fond of salmon! Stuffing salmon with spinach and cheese just takes this delicious gift of the sea over the top!!!

I get fresh spinach from Meck’s our local farm market. It is hydroponic and so delicate and tasty!

Tonight’s recipe is from Tania at Cooktoria another StoneGable Foodie Favorite blog.

Here is an easy recipe for Air Fryer Potato Wedges my daughter made when she was home recently. If you don’t have an Air Fryer you should really think about getting one. Here’s the one I have. Next week I’ll share lots of tips for successfully using an Air Fryer.

Turn the Air Fryer on to 400 degrees and for 15 minutes. Let it heat up.

4-5 medium Russet potatoes, peeled and cut into wedges, 1/4 cup olive oil, 1 tsp garlic salt, 1 tsp onion powder, 5 good shakes hot sauce.

Put all the ingredients except the potatoes in a large bowl and mix. Add the potato wedges and toss well.

Put the potato wedges in a single layer in the basket of the Air Fryer and cook, turning once. Work in batches.

Best if served right away.

We will be grilling extra chicken for lunches this week and making that amazingly easy salad dressing too!

I think this recipe is the most glorious company lunch or dinner! Pair it with a cool dessert like homemade ice cream sandwiches and your family and guest will rave!

It’s only Bobby and me tonight so Bobby will grill while I do the rest (so so easy)! I love romaine lettuce so I might do a mix of spinach and romaine.

THURSDAY- FAMILY FOR THE WEEKEND!

Yay! Our family is getting together this weekend! They will love enchiladas! And the enchiladas in this recipe are so easy to make! I’ll make a double pan because they will go quick!!!

FRIDAY

I love a great BBQ chicken. And chicken thighs are my favorite! Nick from Macheesmo, a StoneGable Foodie Favorite blog, is right on the money when it comes to how to perfectly bbq chicken thighs. Listen to Nick!!!

I believe one of the best ways to be a good cook is to learn all the secrets and tips someone who has mastered the recipe has to offer. And Nick’s advice and tips are exactly right!

The chicken goes so perfectly with the best potato salad you have ever eaten. This recipe has been in our family for generations. We all love it and make it. My Nani (grandmother) taught me to make this family recipe.

My little granddaughter, Emma Kate, is a big fan of this potato salad. And Gigi is all about making my “little bean” happy!

Our early garden tomatoes are ripe for the picking! I like to serve them drizzled with a scrumptious balsamic vinaigrette. This dressing can also be used as a marinade. We especially love to marinade steak in it!

1/2 cup olive oil, 1/4 cup balsamic vinaigrette, juice of one lemon, 1 tsp dijon mustard, 1 tsp Worcestershire sauce, 2 cloves garlic pressed or finely chopped, 3 TBS chopped fresh basil.

Whisk all the ingredients together. Refrigerate if not using right away.

SATURDAY

I’m so intrigued by the idea of marinading hamburgers! And I bet the grilled burgers don’t get dried out. I can’t wait to try this yummy recipe from Tricia at Saving Room For Dessert, a StoneGable Foodie Favorite blog.

Hamburgers on the grill are one of my favorite foods! Yup, the All-American hamburger!!! And I’m serving it with a side of fries for Bobby. Maybe I’ll take one or two!

SUNDAY

Here’s an amazing dinner that takes under 30 minutes to make and is so company-worthy! And the flavors are luscious! Shrimp, artichokes, olives, feta, lemon!!!!! Just so good!

SWEET TREAT OF THE WEEK

I’m just guessing, but I think chocolate chip cookies are universally beloved! I’m not much of a baker, but I do love to make chocolate chip cookies!

For me, I like them with crispy edges and soft middles. Just writing about them makes me crave them! And my family loves them too!

  6. Great menu this week, as always, Yvonne! My favorite cookie is Nika’s chocolate chip cookies. She has a secret ‘ingredient’ that makes them rich and chewy… perfect for a pazookie dessert (what I always ask for when it’s my birthday!)
