Our apple tree gave us a bumper crop of crisp, juicy Macintosh apples! I’ll use some of them for applesauce and some for pies and a whole lot for eating… but a few will be made into scrumptious, flaky apple turnovers! These are soooo much better than store bought! And they can be frozen and popped into the oven and eaten warm… with vanilla ice cream! YUMMY!

Did you know that turnovers are considered legal breakfast food? Yes, they are!!!!
STONEGABLE APPLE TURNOVERS
- 4 tart apples, peeled, cored and cut into small pieces
- 1 package of puff pastry, defrosted in the refrigerator
- Juice of 1 lemon
- 5 TBS sugar
- 5 TBS water
- 1/4 tsp cinnamon
- egg wash
Preheat oven to 400 degrees.
Put the apples, sugar, water, lemon juice and cinnamon into a medium pot and simmer for 5-10 minutes. Just until the apples are soft and not mushy! If the mixture gets a little thick, add a dribble of water. Take off heat and cool.
Open puff pastry. Take out 1 piece. Roll with a rolling pin to smooth out the creases and to make a square. Do not over roll! Cut into 4. Do the same with the second piece of puff pastry.
Put 1 puff pastry square on a well floured work surface. Brush egg wash around the edges of the puff pastry square. Add 2 TBS of apple mixture to the center of the puff pastry square.
Fold over the puff pastry to make a triangle and crimp the edges closed with a fork. Put the turnovers on a parchment lined baking sheet, brush them with egg wash and sprinkle with sanding sugar (or regular sugar ). At this point the turnovers can be frozen and then put into a zip type freezer bag. If you are freezing them, pop them into the oven frozen and bake them for a couple of minutes longer than instructed.
If you are baking them right away, put them into the freezer for 10 minutes so the puff pastry get cold.
Bake for 15 minutes or until golden brown. Cool on a wire rack and eat for breakfast, lunch and/or dinner!
