March 4th is

So, the kind folks at Sara Lee asked me to help them celebrate by creating a pound cake recipe using Sara Lee All Butter Pound Cake!
And so we can all celebrate NATIONAL POUND CAKE DAY Sara Lee is giving one of my dear readers a $50.00 gift certificate and coupons for Sara Lee products!

I took a beloved family recipe (Pineapple Bread Pudding) and tweaked it by using Sara Lee Pound Cake and that took it over-the-top!
It would be perfect to serve with your Easter ham… or with a dollop of ice cream as a yummy dessert… don’t forget the rum sauce!

1/2 cup butter
1 cup sugar
4 eggs
1~ 20 oz.   can crushed pineapple, (drained)
1 Sara Lee Pound Cake, cut into 1 inch cubes
1/2 cup pecans, chopped
Rum Sauce, follows

Preheat oven to 400 degrees.
Cream butter and sugar together with an electric mixer until light and fluffy, about 3 minutes.
Add 4 eggs, one at a time to the creamed sugar and butter.  Beat until well incorporated. Add pineapple and mix just until incorporated.

Fold in Sara Lee Pound Cake and pecans by hand.

Spray 5-6 ramekins generously with cooking spray.  Spoon the Pound Cake mixture into each bowl.

Set the bowls on a parchment lined baking sheet.

Bake for 35 minutes. Until it is bubbling and the top is crispy!

You can also put the Pound Cake mixture into an 8×8 pan… just remember to spray it well!

Bake  for 1 hour.

Rum Sauce
1/2 cup butter

2 egg yolks
1 cup dark brown sugar
1 tsp vanilla
1/4 cup rum
2 TBS heavy cream

Make a double boiler by putting a heat proof bowl over a pot of simmering water.  Add all the ingredients but the heavy cream.  Whisk and cook for about 7 minutes, until the sauce is silky and thickened a little. Remove from heat and add the heavy cream.

Serve on the side with Pineapple Pound Cake Pudding!

Oh Ivonne, what a luxurious bread pudding!! Thank you so much for the recipe, I just copied it! I love it in the remakins for individual servings for dessert. I have a little question if you can: You see, there’s no Sarah Lee cakes around here, but there are cakes like that in the market, so I would love to know the weight of the SL cake you use for this recipe…thank you so much inadvance. Have a great weekend.

The instructions do not include when to add the pineapple. Is it folded in with the pound cake and pecans or put on top of the mixture before baking? Looks delightful!

When I was a little girl, my mother made Pineapple Upside Down Cake in an iron skillet on our enamel stove. What a treat it was!
Mother made her yummy strawberry shortcake for my May birthday with Sara Lee Pound Cake…another treat and my favorite dessert.
Thank you for reminding me that memories can still be made with quality purchases from my market. Home made can combine store bought items, like the Sara Lee cake and other creative ingredients, which work with our busy lifestyles.

FYI for the last few days there seems to be an “under page” to your beautiful blog page which shows at both sides and at the top of your blog page. It says “LOOK WHO IS POPULAR” AND “PHOTOPAGE.” I don’t think you want this because it is very distracting. It cannot be deleted because I have tried.

As usual Yvonne this desert looks yummy. And what a great idea to serve it with Easter ham. I liked Sara Lee on Facebook and shared this blog post on Facebook God bless your day Yvonne.
