ON THE MENU

I love to menu plan! It really helps put delicious homemade meals on my kitchen table each night. It also helps me prep what I can in the morning when I’m at my best and puttering around the house. Here’s a menu plan I think you will love…

My least productive time is around 4:30 in the afternoon, just when I should be starting dinner. If I don’t have a plan I fall back on my default… take-out! A menu plan is just that… a plan. Things change, stuff happens so I don’t get crazy trying to always stick to it!

Some days I just don’t want to cook. On those days I don’t sweat it and order in Chinese Cashew Chicken or other take-out that is WW friendly. But more often than not, if I ‘ve planned and then at least done a couple things for dinner earlier in the day dinner is easy! And I’m so glad I made it!

MONDAY

If you make one thing this week please make the Grilled Balsamic Flank Steak (and maybe the Strawberry Dole Whip)! It’s a fabulous steak, but it is the marinade that is HEAVENLY! This is my go-to marinade for beef and chicken and vegetables. Trust me and MAKE THE MARINADE!!!!

TUESDAY

WEDNESDAY

I’ve never used my air fryer to air fry salmon. So I can’t wait!!! Thanks, Cathy at The Noble Pig! You have opened up an new world of salmon cooking for me!

THURSDAY

It’s zucchini time! And our garden produces its weight in zucchini! Today’s recipe was among the first recipes I posted, so excuse the images. The recipe is a winner and very WW friendly!

FRIDAY

Talk about fresh flavors! Today’s menu is filled with lots of fresh summery flavors!b Today’s main dish is 0 WW points! Thanks, Dee Dee Does!

SATURDAY

Oh, we love quesadillas! And these are packed with flavor. Just a little warning, chipotle peppers in adobo sauce is HOT! So if you are not in love with spicy go easy on the chipotle and substitute salsa instead! Thanks, Glitter And Grace! LOVE your sass!

SUNDAY- FATHER’S DAY

We LOVE LOVE LOVE ribeye steak! It is packed with beefy flavor! And I’ve made this Munchkin Time recipe a few time and it is AMAZING! I’ll follow the recipe but put it on the grill.

Okay, this is no where close to WW friendly! So I’ll eat about 4 oz of the steak and have a big salad. But the rest of my family can eat what they want!

TREAT OF THE WEEK

Dole Whip is a famous sweet treat in Disney World! My sister made a WW friendly Dole Whip recently and it was beyond delicious! Since it is strawberry time here in Lancaster I’m whipping up a whole bunch of this sorbet like dessert!

    Every single one looks delicious! I am really looking forward to trying the fish recipe. I have more problems trying to find good ways to prepare fish than any other. My husband would eat fish of some kind every day but I get in such a rut either frying (which I try to stay from) or a quick saute so this recipe will be a welcome change. These are all “tryers” for me because we would both like them all. He is not quite as adventurious as I am when it comes to new recipes. Thanks for all your hard work!!
