ON THE MENU WEEK OF NOV 19, 2016

ON THE MENU- A week's worth of great recipes and good food!Are you planning for Thanksgiving? I sure am! Actually, I’ve been planning for a couple weeks now. I’m cooking a 20 plus pound turkey to feed a crowd! I’m one of those rare people that LOVES to make a Thanksgiving turkey! Besides the turkey, I’ll make the stuffing and the gravy and the pumpkin pies, but I’ll have lots of help with the rest of the food from my extended family! I can’t wait until we are all together! I’m also planning other meals because we will be together the entire weekend. One day take-out and other meals that can be made ahead and in bulk! Thanksgiving… bring it on!

SUNDAY

Thanksgiving week! I’m so excited for family and turkey and fun! StoneGable bursts at the seams with family. This year we have a new addition! Our little grandson, Anderson. You can read about him and his arrival HERE.

MONDAY

I’m making extra soup to freeze and then pull out for lunches over the Thanksgiving weekend. What an easy and delicious way to feed a crowd. I’ll put out a platter of lunch meats and cheeses, breads and fixin’s for each person visiting to make their own sandwiches.  Even if you are not a fan of Butternut Squash you will like this soup. I add a couple Italian sausages with the casing removed and cooked to the soup. It makes it extra hardy.

TUESDAY

Today I’m setting my Thanksgiving Table. This is so much fun! I’ve already planned it out so now all I have to do is execute it! If you need a few ideas for your table click HERE.

And I’m making stuffing! I DO NOT put it in the bird until Thanksgiving morning, instead I make it up and put it in plastic zip-type bags and keep them in the refrigerator. I just might bake up a little bit for myself today! YUMMY! Stuffing is my favorite part of Thanksgiving!

Today I’m making pumpkin pies. If you need a great recipe with a fabulous and easy-to-use crust and scrumptious Thanksgiving pies you can see it HERE. This recipe is an oldie but goodie. The photography isn’t the best but the recipes are! And here are darling leaf cut outs that will make the edges of your pie something so special this year…. go HERE.

  • Take-out! It’s the calm before the storm!!!! If you are hosting Thanksgiving dinner, today’s the perfect day for some great take-out! We are doing Chinese!

THURSDAY- Happy Thanksgiving!

THE MOST SCRUMPTIOUS TURKEY EVER!

  • The Most Scrumptious Turkey (If you want to roast the most Scrumptious Turkey you will want to read this post. This is THE BEST way to end up with the most moist, caramelized turkey!)
  • Mashed Potato and Sweet Potato Casserole
  • Green Bean Salad
  • Assorted Greens, Pears, and Oranges, Candied Spicy Pecans In A Poppyseed Vinaigrette
  • Green Jello Salad, Cranberry Orange Relish, Cranberry Sauce (right from the can, YUM!) 
  • Pumpkin Pie, Pumpkin Cheesecake, Pecan Pie, Vanilla Ice Cream

We have the same thing every year! Everyone has their favorites so we keep it the same year after year.

FRIDAY

Today is such a fun day for the girls in our family! It’s LEFTOVER GIRLS BREAKFAST! We love this!!!!

There are lots of leftovers for our Friday after Thanksgiving tradition! 

All the girls in the family stay in their jammies and raid the refrigerator to make a plate of their favorites for breakfast. No judging here! Then we all sit around with our yummy breakfast and drink coffee, chat and read magazines. Sooooooo much fun! NO BOYS ALLOWED! We send them to the local diner for breakfast and tell them not to come back until after noon!

SATURDAY

Crabcakes are a great change from turkey! This is an easy dinner and we all love it! Since we are all descendants (and spouses) of Nani, her sauteed rice will be a sweet memory for all of us!

    1. I agree! This year I might try replacing a little of the butter with some shortening. I like a little hint of saltiness in my pie crust.

  27. Potato Filling is missing from your menu! I know it is a popular item on a lot of Lancaster/Berks county Thanksgiving tables. I myself never cared for it.

    From a former Berks Countyian that still has family in Lancaster county.

  31. I pretty much have the same menu each year. Hopefully we’ll have enough leftovers to last a couple of meals and still have extra turkey for a casserole. I always make a big pot of soup from the turkey frame, too. Although my husband and I have a good crust recipe, I always make Libby’s recipe for crustless pumpkin pies – our family really loves it and the ease of this recipe is a bonus. Sometimes I add a nutty crumb topping to it.
    I love your idea for an easy supper on Wednesday night and I know just the thing – a couple of California Pizza Kitchen’s bbq chicken pizzas that I picked up in the freezer case while shopping for Thanksgiving dinner supplies. Yum!!

  32. That’s the same recipe a friend gave me about 30 years ago. It make such an awesome crust, and I usually don’t eat the crust on a pie I buy. Everything sounds so good.

    Earlier this week I mentioned wanting to try “Corn Leek Chowder” and that I would post it should it prove worthy. Tried it, loved it, will make it again and again. Great for this time of year, too. Here goes:

    Corn & Leek Chowder
    In large saucepan with 1 Tbsp olive oil, saute till tender: 2 c. chopped leeks (white portion only), 3/4 c. chopped yellow onion, and 2-3 cloves garlic minced.

    Stir in 3 c. chicken broth, 1 & 1/2 c. cubed peeled potatoes and 1/4 to 1/2 tsp dill weed. Cook for 15-20 minutes or until potatoes are almost tender.

    Stir in 3/4 – 1 c. frozen corn, thawed, 1/4 tsp pepper, dash of Tabasco (to taste) and a “flurry” of dried parsley leaves. Cook 2 minutes longer. In meantime, combine 4 tsp cornstarch and 1 Tbsp water; mix till smooth – stir into soup. Bring to a boil; cook and stir for about 2 minutes or until thickened.

    Stir in 1/2 c. half-and-half cream. Cook over medium heat for 1-2 minutes or till heated through. Garnish each serving with 1 Tbsp shredded cheddar cheese (optional). Yields about 4 cups.

    Note: We found that too much shredded cheddar cheese wasn’t a good idea, so go easy if used.
