Happy March to you, too! Let’s make good food this week! I’m so ready to embrace the flavors of spring! But it’s still quite chilly here and just a little early. So, while I’m wishing for spring, I’ll be enjoying some warmer, comforting dishes this week. This week’s menu features 45 delicious recipes. I hope you will try a few. Monday

Mondays are notoriously busy for me. So it’s nice to have a quick and yummy meal to make. I have made these Baked Tacos several times we love them. I serve them with shredded lettuce, salsa, guacamole, and sliced olives.

I’ve made these scrumptious tacos before from Budget Bytes.

Tuesday

If you make one thing this week, Nani’s Sauteed Chicken should be it. I remember eating this as a child, and it continues to be a family favorite! I call this Peasant food. Every bit of flavor is coaxed out of the simple ingredients! And when I make this recipe, the delicious aroma and childhood memories waft through our home.

This is such an old recipe, so the images are less than perfect. It’s on my long list to update. Don’t let the image put you off. This is a scrumptious recipe and so easy!

We like to serve it over mashed potatoes. But we also serve it over Nani’s Sauteed Rice as well.

Wednesday

I love finding new foodie blogs! I found one recently and have spent more time than I should drooling over it. Seasons And Suppers is a gorgeous blog with images that are so luscious and recipes that will make even the most novice cook want to be a chef!

Do you know my frustration with pork? What happened to the flavor? It became the “other white meat”. That’s the problem. The wine and herb gravy in this recipe will go a long way to make it amazingly delicious! If it is half as good as the image below looks, it will be heavenly.

We are having mashed potatoes again tonight. We love them, and they are perfect with main dishes that have a hearty sauce. The featured vegetable is roasted carrots with honey and thyme. They pair so well with pork. This is another old post, but the recipe is amazing.

What a great comfort dinner to have in the middle of the week!

Thursday

Isn’t this a beautiful fish dish? It can be made in 30 minutes, and it’s so good for us too. Wow! A winner, winner, fishy dinner! The recipe calls for tilapia, but I’ll be using cod.

I’m serving it over a hearty spinach mushroom quinoa skillet. Doesn’t that sound yummy! And tonight’s dinner features my favorite salad.

Friday

Spanakopita is a real treat here at the Tanglewood House. It’s flaky and filled with the delicious flavor of feta and spinach. It’s really quite easy to make and can feed a crowd! 

I love to try new recipes. I’ve made puff pastry and other harder to make foods, but I would never even think I could try to make phyllo dough. I’ve seen it made and I could sooner fly! So, I buy phyllo in the freezer section of my grocery store, and I’m thankful to use it from the box!

Greek salad is the obvious and delicious pairing with Spanakopita. And this menu is perfect for our Friday night dinners! YUM!

Saturday

I was looking for an easy and delicious dinner recipe. I am a huge tostada fan. And these BBQ tostadas will be a super easy supper! I could eat Tex-Mex at least three times a week. I know, YIKES!

Tonight’s tostadas are served with homemade refried beans and another version of blender salsa.

Sunday Company

My dear friend Donna spends many Sunday evenings with us. We enjoyed dinner, and she and I watched a TV series. Right now, we are watching The Crown. I lived in Scotland and England as a child and remember many of the happenings in the show.

Salmon cakes are one of my favorite main dishes. I grew up on salmon cakes, but these are not my mother’s! Not at all. Although my moms were good, I zhuzh them up with aromatics and air-fried them. Oh, these are scrumptious. They are a bit crispy on the outside and tender inside. If you don’t have an air fryer, you should get one. See my favorite in the shop section below. However, you can bake them or pan-fry them.

Also on the menu are melting potatoes. I can’t wait to make these. They sound incredible and will go nicely with the Salmon Cakes.

Sweet Treat Of The Week

I have such a crush of sorts on bloggers who bake. I think they sprinkle sweet love around wherever they go! And I love galette makers. Galettes are the smart girl’s homemade pie.
