Hand pies… little packets of flaky crust and yummy insides! These are perfect for a quick-to-make back to school dinner! The secret is all store-bought, easy to prepare ingredients! These little golden clouds can be frozen ahead and popped into the oven. They go from freezer to table in about 30 minutes! Once you have the basic recipe down… the ingredients can be switched up and the options are only limited by your culinary imagination!

Here’s a very easy recipe that can be tweaked so many yummy ways!!!

EASY PUFF PASTRY HAM CHEESE AND BROCCOLI HAND PIES

Makes 4 big hand pies.

  • 1 pkg of puff pastry, thawed in the refrigerator
  • 1 cup soft cheese spread (I used cheddar and horseradish spreadable cheese in a tub)
  • 1 cup fully cooked ham steak, chopped
  • 1 cup broccoli florets, fully cooked and chopped into small pieces (I used the steam in bag kind)
  • 1 egg
  • water

 

Preheat oven to 400 degrees.

Mix cheese, ham and broccoli in a bowl.

Open up puff pastry on a well floured work surface.

 

Gently roll each piece just a little to get rid of the fold lines. Keep the rectangle shape. Do not press hard. If slight lines still appear, it’s okay!

Fold each piece of puff pastry in half and open them back up. Cut along the fold lines. Now do this again for each piece so you end up with 8 squares.

 

Put 1/4 if the cheese mixture on a square. Dip your finger into cold water and run it around the a 1/2 inch edge of all the sides.

Put another puff pastry square on top of the mixture and play with it until all the edges match. Press gently with your fingers, then push the tines of a fork into the edges, sealing the hand pies and making a nice border.

Scramble an egg in a small bowl with a splash of water. Use this egg wash to cover the top of each  pie. Cut vents in the top of the pie to let air escape.

Put the hand pies in the refrigerator for 15 minutes. Then bake for 20-25 minutes until they are golden brown and puffy.

Eat hot!!!

To freeze: prepare hand pies but do not bake. Freeze in a single layer on a parchment lined baking sheet and transfer to a freezer bag. To bake, heat oven to 400 degrees and bake for 30 minutes until golden brown and the inside ingredients are hot.

Here are a few other quick hand pie combinations:

  • chicken, Alfredo sauce, broccoli
  • sloppy joe meat
  • pepperoni, marinara sauce, mozzarella cheese
  • ham, cauliflower. cheddar

  7. I would love to have a stash of these in the freezer. For other flavor combos I would try taco meat with queso fresco, pulled pork, leftover turkey, or a vegetarian one with peppers, onions, mushrooms and zucchini.

  15. Found this recipe three weeks ago and have made it three time already. First time for me and twice for company. All raves. Couple of ideas: if cheese is stiff micro for just a little bit for easier mixing, before adding cheese mixture to bottom layer I smeared a 2 inch square of grainy mustard.

    Going to be making a couple of batches up for the freezer trying your other suggested options.

    1. Hi Tracey, I think you can cut the puff pastry down to a smaller size. Try that! And puff pastry is better served warm. You might want to make them and freeze them and then when you are ready to bake them add just a little more time. Hope this helps.

        I use flaky canned biscuits when I want a smaller pie. I also do this open-faced with a variety of fillings. The biscuits bake up around the sides and make for an easy hold and two or three bites.

    I make a handpie which is very similar with tuna. I make a basic tuna salad with sweet pickle relish, plus I add finely chopped tart apple. I also make a chicken salad pie and add cranberries and chopped blanched almonds. We’ve been eating these since my children were little.
