BEAUTIFUL AND THIN EVERYDAY PANCAKES

BEAUTIFUL AND THIN EVERYDAY PANCAKES.- These make ahead pancakes are perfect to roll up with your favorite berries or sausage! YUM!

I love fluffy homemade pancakes. But I’m not a fan of them when they get so thick it truly is like eating cake. I like my pancakes thin and still fluffy! Stacked with butter in between and covered with real maple syrup or rolled up with berries or sausage links inside! YUM!!!! These everyday pancakes are in between regular buttermilk pancakes and crepes. And leftovers are amazing when toasted and spread with butter and jam and eaten like a piece of toast! Make the batter ahead and finish the pancakes the next morning! Let’s make homemade everyday pancakes!

Let’s make a scrumptious batch of pancakes!!!!!

BEAUTIFUL AND THIN EVERYDAY PANCAKES

Light, easy to roll up pancakes! A cross between classic buttermilk pancakes and crepes! So light and delicious!
Print Recipe

Ingredients

  • 1 cup flour
  • 1 tsp baking powder
  • dash of salt use a NOT kosher salt
  • 1 TBS sugar
  • 1 egg
  • 3 TBS butter melted and divided
  • 1 cup whole milk or buttermilk

Instructions

  • The key to fabulous pancakes is NOT to over mix the batter!!!!
  • Put flour, baking powder, salt, and sugar in a large mixing bowl. Whisk to incorporate.
  • In another bowl whisk the egg and then add 2 TBS butter and milk. Mix well.
  • Add the egg mixture into the flour mixture and mix until JUST INCORPORATED. If there are lumps, don't worry! It's okay!
  • At this point the pancake batter can be covered and put in the refrigerator overnight and cooked the next morning.
  • Heat a TBS of butter in a cast iron skillet until hot. The skillet must be hot or the pancakes will stick. Add a scoop of pancake batter. It will spread out and be thin. When little "bubble" start to appear on the top of the pancake, turn it and cook the other side until golden.
  • I preheat my oven to warm or 170° and put the pancakes on a rimmed baking sheet to keep them warm until they are served.
  • Serve pancakes with butter, maple syrup, honey, fresh fruit, jam, link sausage or bacon! Serve them stacked up high or roll them up too!

Notes

Pancakes can be frozen between wax paper and gently reheated in the microwave or toasted in the toaster.

  3. You can also try super thin pancakes, more like a French crepe without adding the baking powder, I love making them for the children on weekend mornings, with real maple syrup of course and blueberries when they are in season. Our youngest daughter loves to spread them with nutella, oh so French! My recipe is slightly different but I am sure they taste much the same!

This looks like a good pancake recipe. I like my Swedish pancake recipe I got from a Swede’s wife. My Dad liked the Lunds mix. They are very thin! I could not turn them!! My spouse won’t eat pancakes so I miss them. I do like thin pancakes. I never knew I could freeze them with wax paper. What a great tip. Thank you!!

  34. Je fais souvent des pancakes ici, en France, pour le goûter ou le petit déjeuner. C’est tellement bon. Accompagnés de sirop d’érable, de crème fraîche battue ou de confiture… tout le monde adore!

  35. They sound delicious! I am definitely going to try these! Thank you!

  36. Lynn Spencer says:

YUM!! Thin pancakes are my favorite. Trying this out in a few minutes.

  37. Several have asked about the egg in the ingredient list but it’s not corrected. Assume you took Sunday off so let us know the answer when you get back on. Also, I find that butter browns and burns when using in a hot skillet…can’t oil be used for these? My husband loves thin yet fluffy pancakes.

  38. Theresa Nolan says:

  39. Yum! I’ll be making these for my boys this morning 🙂

YES, I love “crispy”. I was wondering what I could serve this Wednesday morning when the girls from Garden Club arrive for a breakfast and workshop to make birdhouses. This is perfect and easy. I’ll be sure to add fresh flowers to our table.

  50. Why can’t I print your recipes?

    1. Hi Jackie, I’m looking into that. This probably means nothing to you but WordPress (the site that holds all my posts and where I write new ones from) has moved to a different system and I’ve been rolled over to it. Let me see if this has affected my printables.Sorry about the wait!

  51. They look and sound amazing! How many does this recipe serve? Thanks!

  52. Catherine says:

To the question of how many servings, I doubled the recipe and it served 8 double stack pancakes, so 2-4 servings for the single recipe. I used homemade buttermilk (squeeze half a lemon, pour the rest of the way for the milk to sit 5 minutes, then stir) and this recipe is among the best pancake recipes I’ve ever made

  53. Iris Stone says:

I absolutely love how detailed this recipe is, thank you kindly for the note about wax paper when freezing!

    1. I’m so glad you noticed! I try to give tips to make recipes as successful and delicious as possible!

Might be better with the milk vs buttermilk but the batter was not thin enough and never spread. I ended up adding milk to the second batch and it worked much better.

    1. Good to know, Noelle. Sorry, you had trouble with the buttermilk. Maybe your griddle was too hot.

This is my go-to pancake recipe — just like the ones my grandpa used to make. While my kids are fluffy pancake people, my partner and his kids request these and love the crispy edges as much as I do. For the crispiest edges, I cook them in vegetable oil flavored with a little butter.
